In our family, it is customary to cook pancakes with a filling, which can be sweet or hearty with meat. In this case, I use lean minced pork and fresh cabbage.

Frying the filling makes the cabbage look like fried onions, which gives the pancakes a special juiciness and sweetness. Be sure to add fresh greens and nutmeg to meat with cabbage. The rest of the spices can be different and in the amount you need.

1. For the filling, choose a brisket of your choice: more or less fat. Cut off the skin and cut the bacon and meat into thin strips or cubes.

2. Wash the cabbage and chop it into thin, not very long strips. You can chop the cabbage even more finely - if you like.

3. Put the brisket in a frying pan and heat it, lightly fry - a little fat will appear. Now lay out the cabbage, salt, add spices. Fry for about 10 minutes, then add the tomato juice and simmer the pancake filling for 15-20 minutes, stirring occasionally.

4. While the filling is being prepared, you can make a pancake dough. In a bowl, combine milk, egg and vegetable oil.

5. Begin to beat slowly and add sugar and salt. Stir with a whisk or fork.

6. Add the sifted flour.

7. Stir the dough vigorously until the last lump of flour disappears. In terms of density, it should resemble fatty kefir. Let it "rest" in a cool place for 25-30 minutes.

8. Pour some dough into a preheated frying pan, distribute it over the entire frying pan, reduce heat to low. Fry the pancake for 3-4 minutes.

But since it is winter now, you can exclude green onions from the recipe, or replace them with onions.

We need:

  • pork - 500 gr
  • milk - 1.5 cups
  • flour - 1 glass
  • raw egg - 3 pcs
  • boiled egg - 2 pcs
  • sugar - 1 tbsp. spoon
  • baking powder - 1 tsp
  • sunflower oil - 3 tbsp. spoons + 2 tbsp. spoons
  • salt, pepper - to taste

Preparation:

1. Carefully break fresh eggs into a large deep bowl, being careful not to leave small pieces of shell. Pour in milk and beat well until frothy.

2. Combine flour with sugar, baking powder and a pinch of salt. Stir and pour in portions into the milk-egg mixture, stirring constantly so that no lumps form.

3. Pour in sunflower oil (3 tablespoons) and beat until smooth. You should make a batter.

4. Pour a portion of dough into a frying pan and fry on a hot surface on both sides. In this way, bake all the products and let them cool slightly.

5. Rinse the pork well, remove excess streaks and twist the meat in a meat grinder.

Pork can be replaced with chicken fillet. In this case, finished products will turn out to be less satisfying.

6. Chop the onion into small cubes. Fry it in a well-heated skillet until translucent, where you first add 2 tablespoons of oil.
