How to Make Lean Mushroom Gravy

Chop finely onions, heat a skillet and add vegetable oil, then fry the cooked onions in it until golden brown. At this time, place the dried mushrooms in a saucepan with water and boil, let them absorb moisture. Then rinse the mushrooms again with cold water and pass through a meat grinder. Combine them with onions and fry. about 5 minutes. Next, in a separate skillet in the remaining oil, fry two tablespoons of flour until its color turns golden brown. Then combine the flour with the broth remaining from the cooking of the giibs and boil a little for about 10 minutes. Combine the fried onions and mushrooms with the resulting sauce and let it simmer again. The result is a thick and tasty lean gravy.

Squid sauce

Fresh frozen squids - 0.5 kg

onions one large head

one large carrot

1 liter of water

4 tbsp. tablespoons of premium flour with a slide

Bay leaf, salt and pepper to taste

Peel fresh squid from entrails and skins, cut them into small strips. Finely chop the onion with a sharp knife, grate the carrots on a fine grater and fry them with onions in vegetable oil. Dissolve the flour in small portions in cold water, then combine all the prepared ingredients for the gravy and simmer for 5-6 minutes.

Lean flour sauce

Fry the flour in a dry skillet until golden brown. To overcook finely chopped onions and carrots, grated on a fine grater. Transfer the overcooking to a saucepan and, when it cools down, add the fried flour, stir. Add boiled cold water, mix everything and cook until thickened, add salt and spices to taste.

You can make a similar gravy even without oil. Then the carrots and onions should not be fried, but stewed in a small amount of water.

Products for the main gravy:

half a glass vegetable oil, 2 tbsp. tablespoons of vinegar or lemon juice, 0.5 teaspoons each of sugar and salt, ground black pepper to taste. Mix all components thoroughly in a glass container and beat. The sauce can be prepared with a margin, be sure to shake it before each use. To this basic sauce you can add:

for onion gravy

1 teaspoon of grated onion or chopped leeks thoroughly pounded with salt; for mustard sauce - 0.5-1 tsp of ready-made table mustard and another 0.5 tsp of sugar; for tomato sauce - 1 teaspoon of tomato paste or 2 tbsp. tablespoons of tomato juice and 0.5 tsp of grated onions;

for gravy with herbs

1.5 teaspoons of finely chopped parsley, 1 teaspoon of chopped dill and 0.5 teaspoons of chopped green onions.

Gravy with caraway seeds and horseradish root

In wine vinegar, diluted to taste with cold boiled water, add 1 tbsp. a spoonful of caraway seeds scalded with boiling water, 1-5 tbsp. tablespoons of grated horseradish. Add the juice of 1 lemon. Mix everything thoroughly and use for colored beans with boiled vegetables (beets, carrots and others to taste).

Red tomato sauce

Stock up in oil 3 tbsp. tablespoons of flour, dilute with 1 glass of mushroom, vegetable broth or boiling water, stirring so that the mass is free of lumps, and boil over low heat for 10-15 minutes. Separately fry finely chopped roots (carrots, parsnips, parsley) and onions, taking them to taste, 2-3 tbsp. tablespoons of tomato paste, pepper, bay leaf and add everything to the sauce.
Boil the sauce for another 5-10 minutes, strain, rub the mass through a sieve, add 2-3 tbsp. tablespoons of vegetable oil, bring to a boil. Use a gravy hot or cold.

Garlic sauce

Separately, in a frying pan, prepare a thick white sauce from fried in oil flour and boiling water, lightly salt and pepper. When ready, add another 1-2 tbsp. tablespoons of flour. Can be diluted with cucumber pickle. Add garlic, crushed with salt, into the prepared hot sauce and, covering the pan with a lid, let stand for 3-5 minutes.

Thoroughly sift 60 grams of wheat flour. Dissolve it in a little water and fry in a pan until tender. It is important to wait until the flour changes color a little. But so that it does not turn brown and burn.

Bring two cups of vegetable broth to a boil. Add to it in flour, stirring with a wooden spoon. Stir for a long time and thoroughly until the sauce thickens and the lumps disappear (4 or 5 minutes), then remove from heat. Add a pinch of salt, some lemon juice, grated nutmeg and chopped herbs.

5. Chop white cabbage with a sharp knife into thin shavings.

6. Put mushrooms in a saucepan with onions and garlic, then bell pepper.

7. Mix everything and simmer for 5 minutes. Put the cabbage on top of the roast.

8. Cover the saucepan with a lid and reduce heat to low. Simmer vegetables with mushrooms until tender. At the end, add salt and pepper to the dish.

9. Boil spaghetti in salted water.

10. Discard the finished spaghetti in a colander, drain the water and immediately transfer to a stewpan for vegetable frying.

11. Stir the spaghetti thoroughly with the vegetable sauce.

12. Season with salt and pepper to taste. Heat spaghetti over low heat for 2-5 minutes.

The old recipe includes forest mushrooms (chanterelles, boletus, boletus). If there is no way to get real gifts of the forest, they can be replaced with champignons or oyster mushrooms, which are sold in almost all large stores. Sauce with mushrooms is amazingly suitable for dumplings with potatoes.

So, we take:

  • 500 grams of mushrooms;
  • 1 cube of Gallina Blanca mushroom broth or 0.5 l of boiled mushroom broth;
  • 3 tablespoons flour;
  • 100 g turnip onions;
  • 1 large carrot;
  • 50 ml of vegetable oil;
  • a couple of cloves of garlic;
  • salt, black pepper to taste.

Cooking method:

  1. Prepare the ingredients: rinse the mushrooms under the tap with warm water, wash and clean the vegetables.
  2. Put the pan (preferably with a non-stick coating) over medium heat, add flour and brown it until it is pale beige. Calcined flour takes on a nutty flavor. Let's put it aside and cool it down.
  3. Pour the oil into the pan. Chop the mushrooms into thin slices and send to simmer for 5-7 minutes.
  4. Cut the onion into half rings, finely chop the garlic, grate the carrots on a coarse grater and, stirring with the mushrooms, fry until golden brown.
  5. Let's make a broth by dissolving a chopped cube of broth in a half-liter jar with warm boiled water (if you have a ready-made mushroom broth, then just skip this item).
  6. Pour the prepared flour into a bowl. In a thin stream, stirring vigorously, pour in the broth. Pour the liquid with flour to the frying. Salt, season the contents of the pan.
  7. Reduce the gas, stirring occasionally, boil the sauce for 3-5 minutes until thickened.
  8. Whisk the hot semi-finished product in a blender bowl.
  9. Serve the sauce by cooling it down to 20-25 ° С (decorate with chopped herbs if desired).

You can store in a clean container with a lid in a refrigerator for no more than a day.

Pink pasta sauce

Such a gravy for an amateur. It does not require heat treatment and is done in a matter of minutes. However, it also has disadvantages - the product cannot be stored for a long time (ideally, cook before serving and eat it during lunch).

We will need:

  • tomato paste - 1 glass;
  • sweet apple - 1 pc.;
  • classic tofu cheese - 1 package (200 grams);
  • parsley, dill, green onions - 50 grams each;
  • lemon juice (apple cider vinegar) - 1 tsp;
  • garlic - 2-3 cloves;
  • olive oil (any deodorized) - 1 tablespoon;
  • a mixture of peppers, salt, sugar to taste.
  • All manipulations will be carried out using a submersible blender.
  • Unload into a small plastic bowl or bowl tomato paste.
  • Pass the peeled garlic through a press.
  • We cut the washed and dried herbs on a towel with a knife.
  • Divide the curd soy cheese into cubes.
  • Peel the clean apple, remove the core, cut into slices.

This is very healthy dish... Thanks to the sweet pepper, it is truly a storehouse of vitamins. At the same time, spicy things will not hurt at all in the "lean life".

If you replace honey and soy with salt and sugar, green onions with onions, and add 9% vinegar and a couple of bay leaves to the recipe, then the dressing will be an excellent help in the winter cold, as a preservation.

This sauce is also suitable for people who are not even fasting. It will perfectly fit into the menu with chicken cutlets, sausages and kebabs.

  • 2 red and 1 yellow bell peppers;
  • 2 young zucchini;
  • 3-4 tomatoes;

  • 3 tablespoons l refined sunflower oil;

  • Blanch the tomatoes (cut the spout with a cross, put each fruit in boiling water for 2-3 seconds), remove the skin and divide into 4 parts.
  • Cut the hot pepper crosswise into two halves.
  • Finely chop the onion feathers.
  • Simmer the vegetable mixture in oil over low heat, covered for 20-25 minutes. 5 minutes before the end of cooking, remove the structure and add with honey.
  • Serve warm, adding to a plate with baked potatoes, cabbage and carrot pancakes, crumbly rice or buckwheat.
