More than other ways, I prefer the simple old classic recipe for sauerkraut like my grandmother. Probably already used to doing this, and in general, to be honest, I don’t really like to experiment.

Moreover, the cabbage according to this recipe turns out to be very tasty, juicy, white, crispy! Everyone I've given this recipe to now does just that.

In principle, this is the most common simple way of sauerkraut in three days without vinegar and water, in a natural way in its own juice. But there is one small nuance in it, one secret that I adopted from my grandmother, which makes the cabbage especially tasty. I think not many people know about it.

Sauerkraut is much healthier than fresh, it contains more vitamin C and P.

Probably, there is not a single person who would not like sauerkraut: it is delicious on its own, in the form of salads (I like to add onions to cabbage, season with vegetable oil).

What about a winter vinaigrette salad? Everyone loves. I love to make it with beans, beets, boiled carrots and potatoes, pickles and sauerkraut of course, I add a little sugar. Delicious!

I love borsch with sauerkraut, it adds sharpness to the dish. I sometimes cook cabbage soup. Still very tasty are dumplings with sauerkraut.

Many people are used to harvesting sauerkraut for the winter.

I haven’t done this for a long time, I ferment one jar, and when all the cabbage is eaten, I ferment another one. And only one head of cabbage is consumed, and it takes a little time to cook, and there are no problems with storage.

And before I did so, the whole story.

When I entered my husband's family, it was customary for them to pickle cabbage with the whole family, they all gathered together on the same day in the same apartment and chopped a huge amount of cabbage. Cabbage was then purchased in bags.

(But there was a time when everything was harvested for the future, I don’t remember if it was possible to buy fresh cabbage in winter).

Cabbage was packed into jars and taken to the cellar for storage, then it was necessary to go there every day, open the lids and pierce the cabbage so that gases would come out.

To be honest, I didn’t like this procedure, because my mother and I fermented cabbage in a different way, using an old grandmother’s recipe, and it was tastier.

In subsequent years, everyone decided to sauerkraut at home, without gathering all together. But the jars were kept in one place in the cellar, and everyone could take any one they liked. So, my jars disappeared from the cellar first.

Well, now I turn to this old recipe for sauerkraut.

Sauerkraut like grandma's: recipe

So, first of all, choose a good cabbage. Not all of its varieties are suitable for fermentation. White is best. I buy a big head of cabbage, like this, if you touch it, and when you start cutting it, it already creaks and crunches.

  1. For the initial step, we need salt, a knife, a cutting board, a large bowl and a large saucepan.

I chop the cabbage into strips, cut off a large piece, remove the top sheet, put it on the edge and cut it.

I put the chopped cabbage first in a large bowl and salt.

This is how it is more convenient to salt, there is no need to measure how much salt is required per kilogram of cabbage. Just salt to taste. In a large bowl with a diameter of 30 cm, I put a tablespoon of salt without a top, even almost full.

I mix the cabbage well, taste it for salt and then transfer it to a large 5-liter saucepan, where it will ferment.

Thus, in parts I cut and salt the cabbage, I fill the pan tightly with it almost to the top.

  1. On top I put a plate or an inverted lid from another saucepan, put a load, for which I use a three-liter jar of water.

Where are the carrots, you ask? No, I have not forgotten about her, but she will enter her role a little later, why, I will explain further.

  1. We put the pot with cabbage in a warm place, the ambient temperature should be 20-22 degrees. If the temperature is lower, the cabbage will not ferment or will be very slow. With strong heat, the fermentation process will be too fast, and the cabbage will not taste good.

The optimal fermentation time should be 72 hours, i.e. 3 days. During this period, in the morning and in the evening, we remove the load, pierce the cabbage in several places with a fork or spatula so that the gases come out.

After a short time, we hoist the cargo back.

  1. Three days have passed, we remove the load, peel a couple of large carrots and three of them on a grater right into the pot with cabbage.

Mix well, reach the bottom with your hands.

We put the finished cabbage in a jar.

  1. We still have brine in the pan, I put a spoonful of sugar in it, mix it and pour such a sweetened brine into a jar of cabbage. Sugar and sharpness gives cabbage, and a special pleasant taste. Therefore, I always make sauerkraut with sugar - this is my recipe.

That's all, sauerkraut according to the recipe like grandmother's is ready, we store it in the refrigerator.

And the secret of cooking is that carrots are added after cabbage fermentation, so it does not absorb excess gases from fermentation and remains denser and with its natural taste. In addition, additional mixing of cabbage with carrots after fermentation before placing them in jars contributes to a greater release of gases and the cabbage turns out to be very tasty, juicy and crispy. I advise everyone!

Preparing vegetables:

A head of cabbage 2.5 - 3 kg or several heads of a smaller size I clean from the top leaves, cut into 2 parts, remove the stump and shredded straw. I don’t chop with a knife, it’s a long time 🙂 I use a special grater - a shredder.

Carrots 300 g, peeled and rubbed on a coarse grater.

I cook on the kitchen table, it turns out a large pile of cabbage + carrots on top + bay leaf 5 pcs + peppercorns 15 pcs = I mix with my hands, do not crush and do not press.

In a clean 3-liter glass jar, I tightly put the prepared vegetables with my hand and tamp with my fist.

Brine:

In 2 liters of cold water I add 2 tablespoons of salt (with a slide) and 2 tablespoons of sugar (with a slide). Stir until the salt and sugar are dissolved - ready.

Sauerkraut:

In a jar of cabbage, I pour the brine to the top (it takes about 1.5 liters).

I put the jar in a plate, since the brine will flow out during the fermentation process and leave it at room temperature 22-25C. The room should not be cool, as processes slow down, but not hot either. I do not cover a jar of cabbage.

It takes 2-3 days to prepare sauerkraut.

Important!!! Every 8 hours, the cabbage must be pierced (I do it with a long knife). I lower the long knife into the jar to the very bottom, so I do it in 3-4 different places of the jar. This is what will give your cabbage a crispy taste, as when pierced, excess gas is released, which is formed.

After about 12 hours, the brine will start to flow out of the jar and you will notice bubbles, this is normal. After 1.5 days, the brine may slightly thicken and become cloudy.

After 2-3 days, the fermentation processes subside, and the cabbage is ready.

I taste cabbage every time I pierce it with a knife. As soon as the cabbage has acquired a taste and aroma, and this is after 2 days and it’s already delicious for me, I cover the jar with a lid and send it to the refrigerator. You can eat right away, but I like it when it's cold. From now on, I keep it in the refrigerator. You can store for several months, but this does not happen to me 🙂.

Compound: 5 kg cabbage, 100 g carrots, 100 g salt, 25 g sugar.

Cooking. Shred the cabbage and place in a bowl. Grate carrots on a coarse grater. Then lightly rub the cabbage with salt and sugar. But this procedure can not be carried out if the cabbage is very juicy. Then add carrots and mix again.

Prepare a large saucepan or barrel and put cabbage leaves on the bottom, then mixed vegetables. Each layer should be packed very tightly. When the entire vegetable mass is over, the top should be covered with clean gauze. Put a wooden circle of the appropriate size or a flat large plate on top. Then put oppression. It can be a clean rock or a 3 liter jar of water. Leave the container with the workpiece at room temperature for 2-3 days, piercing the contents with a wooden stick to the very bottom two or three times daily. To release the gas accumulated inside. Each time for this we remove oppression and gauze. Rinse gauze every other day in warm water.

After three days, the fermentation process should stop, and this will be a signal that it is time to take the workpiece to a colder room. According to the rules, cabbage must be kept for another two or three weeks at a temperature of 16–18 degrees, and only after that it must be removed in the cold. During this period, pierce the contents with a stick 1-2 times a day. But sometimes this rule is violated, and cabbage is taken out earlier in the cold.

Sauerkraut in a jar

Compound: for a 3-liter jar: 2.5 kg of cabbage, 1 small carrot, 3 pcs. bay leaves, cold brine (0.5 liters of water + 2 tablespoons of salt).

Cooking. Prepare the brine in advance - add salt to boiling water, bring to a boil and cool. Shred the cabbage. Cut carrots into strips or grate. Put 1 bay leaf at the bottom of the jar. Top - cabbage, sprinkled with carrots. In the middle again 1 bay leaf. Then fill the jar to the top, tamping with your hand. When the jar is full, add a third bay leaf. Pour cold brine over cabbage. Pack again and add cabbage and carrots to the jar until the brine rises to the top.

Cabbage should ferment for two days at room temperature. Active fermentation will begin in a day, while the brine can overflow over the edge of the jar. Therefore, you need to put the jar in some kind of container.

During fermentation with a knife, it is necessary to periodically remove the resulting gas. After two days, close the jar with a lid and put it in the refrigerator for a day. Only three days - and the snack is ready. Before serving, add 1 tsp. sugar, fresh onion rings, vegetable oil. You can add pickled cucumbers, cut into slices, or a fresh apple.

Pickled cabbage for the winter "Fly away"

Compound: cabbage 2.5 kg, sweet pepper 500 g, onion 500 g, carrot 500 g, vegetable (sunflower) oil 250 ml, wine vinegar (6%) 370 ml, salt 2–3 tbsp. l., sugar 3 tbsp.

Cooking. Chop the cabbage, cut the onion into half rings, and cut the sweet pepper and carrot into strips. Add salt, sugar, vinegar. Mix. Cover with cheesecloth and leave in the kitchen for 2-3 days, stirring occasionally. Transfer to jars and store in a cool place.

Pickled cabbage with beets

Compound: 2 kg of cabbage, 500 g of beets, 1 carrot, 1 clove of garlic, 1 liter of water, 150 g of sugar, 2 tbsp. l. salt, 150 g of 9% vinegar, 10 black peppercorns, 3 bay leaves, 3 tbsp. l. sunflower oil.

Cooking. Chop cabbage, grate carrots and beets on a coarse grater or cut into strips. Cut the garlic into pieces. Mix the ingredients in a deep bowl. Arrange the vegetable mix in sterilized jars. Hard to tamp.

Prepare marinade: put water on the stove, add spices, add vinegar at the end of cooking. Pour the brine into jars. Close the lids, leave to cool. Then place the blanks in the refrigerator. Ready for use after two days.

Sweet sauerkraut

Compound: 2.5 kg of white cabbage, 0.5 kg of carrots, 0.5 kg of onions, 0.5 kg of bell pepper, 1 tbsp. vegetable oil,
2 tbsp. l. salt, 0.75 tbsp. sugar, 2 tbsp. l. vinegar.

Cooking. Chop the cabbage, cut the bell pepper into thin strips (remove the seeds). Chop the onion into half rings. Cut carrots into strips or grate. Mix all vegetables. Add salt, sugar, vinegar, vegetable oil. Mix. Let stand in a bowl for 40 minutes until the juice stands out. Sterilize jars. Transfer the salad to prepared sterilized jars. Close with lids and store in a cool place.

Pickled cabbage "Fast"

Compound: 1–1.5 kg cabbage, 2 carrots, 1 bell pepper, 1 pc. onions, 1 handful of cranberries, 5-6 cloves of garlic; for the marinade: 450 ml of water, 1 tbsp. l. with a slide of salt, 100 g of sugar, 100 g of vegetable oil, 120 g of 6% vinegar, a few peas of allspice and black pepper, 1 bay leaf, 2 pcs. carnations.

Cooking. Boil the marinade: pour water into a saucepan, add salt, spices, sugar, vegetable oil (everything except vinegar) and put on the stove to boil. While the marinade boils, finely chop the cabbage, transfer it to a bowl and crush it a little with your hands. Grate the carrots, chop the pepper into strips. Onion cut into half rings. Finely chop the garlic. All this, together with cranberries, add to the cabbage and mix.

Boil the marinade for a couple of minutes. Add vinegar to it, bring to a boil and remove from heat. Pour cabbage with hot marinade. Press it down with a plate with a load so that the marinade comes out over the cabbage. In this form, leave the cabbage at room temperature for 6–8 hours, then transfer it to a jar, close the lid and place in the refrigerator. Pickled cabbage can be stored in the refrigerator for 2-3 weeks.

Cabbage in hot brine

Compound: cabbage (winter varieties) - 2-2.3 kg, carrots - 2-3 pieces, garlic - 3-4 cloves, water - 1 l, sugar - 1 cup, salt - 1 tbsp, vegetable oil - 1 glass, vinegar 9% - 1 glass, bay leaf - 2-3 pieces, peppercorns - 6-8 pieces.

Cooking. Finely chop cabbage, carrots on a coarse grater, garlic through a press - mix all this, add bay leaf and pepper, transfer to a large container in which we will marinate.

Preparing the brine: bring 1 liter of water to a boil, add salt, sugar and vegetable oil.

Let it boil for a minute. Remove from heat, add vinegar to the brine and pour cabbage with this mixture. Gently mix, put on top of a plate and put the load. Let the cabbage cool at room temperature.

TIPS

  • Choose tight heads with white outer leaves that are late in maturation, free of damage and signs of disease.
  • Horseradish root, added during salting, will give the cabbage a special crunchiness and flavor.
  • Use salt without additives.

Why is sauerkraut sour?

Lactic acid bacteria help to turn fresh cabbage into sauerkraut, which cause the cabbage juice to ferment, resulting in a tart-sour taste in the final product.

The process of sauerkraut can be conditionally divided into three periods:

  • salting
  • fermentation (fermentation)
  • cold end stage

In the first period common salt comes into play, which extracts the juice from the cabbage along with all the organic substances that are in it. At the very beginning of the process, the concentration of table salt in cabbage juice is quite high, so microorganisms do not yet multiply in it. As the amount of cabbage juice increases, the concentration of salt in it decreases, thereby creating conditions for the reproduction of bacteria and yeast. The activity of yeast and other microorganisms causes strong gas formation. Yeast fungi, coli bacteria, etc. participate in the fermentation process. At the same time, lactic acid bacteria begin their activity, which gradually displace the rest of the microflora and occupy the main place in the fermentation process. Lactic acid, which is produced by lactic acid bacteria, inhibits the growth of foreign microorganisms, preventing cabbage from rotting. The first period of fermentation of cabbage ends with the rapid multiplication of lactic acid bacteria.

Second period is fermentation or main fermentation. At this time, lactic acid accumulates in the brine, caused by the action of a certain kind of bacteria. It is they who determine the sour taste of sauerkraut.

At the end of the second period, lactic acid fermentation stops. And with that begins third period, which is characterized by the suppression of the activity of lactic acid bacteria by the accumulated lactic acid. However, it is worth considering that in conditions of high acidity, molds and other yeast fungi can also develop, which, in turn, neutralize lactic acid. To prevent this from happening, ready-made sauerkraut should be stored at a temperature of 0 - 2 ° C.

Fermenting cabbage - important points

  1. The nature of fermentation, the rate of fermentation and, as a result, the taste of the finished product, first of all, depend on the temperature at which fermentation takes place. The most favorable temperature for fermentation is 22-25°C - as this is the ideal temperature for the reproduction of lactic acid bacteria. At this temperature, fermentation lasts from 5 to 7 days. Sauerkraut, at the same time, turns out tasty, crispy, with the lowest alcohol content and with a higher content of vitamin C.
  2. When the temperature drops to 15-20°C, the fermentation process lengthens. At temperatures below 15 ° C, the fermentation process stops, and at temperatures close to 0 ° C, it may not occur at all. If the temperature in the room is above 25 °, then extraneous microflora, including putrefactive bacteria, will actively develop in the cabbage brine.
  3. The acid content in cabbage can be adjusted by changing the temperature, as well as the amount of salt. The more salt, the less acidic the cabbage will be. Normally, the content of table salt in the finished product should not exceed 2.0%.

In order to get tasty, juicy and crispy sauerkraut, you need to choose the right heads of cabbage. Not every cabbage is suitable for this purpose.

Undesirable for use:

  • early maturing varieties, as they have a loose, loose tissue and a low content of sugars necessary for fermentation;
  • lean, dry cabbage, because it will give little juice and the fermentation process will be complicated;
  • unripe cabbage or with green leaves;
  • rotten cabbage or cabbage with mold, because rot and mold will inhibit the development of the desired microflora.

There are certain varieties of white cabbage that are recommended for fermentation, as a rule, these are mid-season and late varieties:

  • mid-season varieties: Belorusskaya, Slava-1305, Slava Gribovskaya, Mozharskaya, Dobrovodskaya, Gift, Saburovka, Aggressor, Anniversary F1, Nadezhda, Sibiryachka, Megaton, Stakhanovka, etc.;
  • late-ripening - Amager, Slavyanka, Moscow late, Winter Gribovskaya, Blizzard, Kharkov winter, Turkiz, Geneva F1, Valentina F.

For fermentation, choose large heads of white color. They should not have green leaves. Only mature white cabbage contains enough sugars for fermentation and a lot of juice.

Delicious sauerkraut - a classic grandmother's recipe

What we need to cook sauerkraut according to an old grandmother's recipe:

  • white cabbage - 10 kg.
  • carrots - 300-350 gr
  • salt - 150-200 gr
  • dill seeds - 1 tbsp. l.

So, white cabbage of all the above varieties is suitable for fermentation. First, the cabbage should be washed and the top bad leaves cut off. Then the cabbage must be weighed. If you bought cabbage in a supermarket, then you probably have a sticker with the weight of the head (s) in front of your eyes. You can simply cut out the stalks, weigh them and subtract their weight from the weight of the entire cabbage. But, if you don’t know how much your cabbage weighs, then you will most likely have to weigh each head separately and also take away the weight of the stumps with fasting.

If you have cabbage more or less than 10 kg, calculate how much salt you need for your quantity. It's the same with carrots. Carrots should not be too much, otherwise it will give more sweetness than necessary, and less carrots will not give the cabbage a beautiful pink-yellow hue.

Cabbage is chopped on a shredder or with a knife, depending on the quantity. Shredded cabbage is mixed with grated carrots, then sprinkled with salt and mixed and rubbed lightly with your hands. You do not need to add sugar if the cabbage is ripe and sweet enough, but if the cabbage is not very tasty, dry and not sweet, you can add a little sugar to the salt (a couple of tablespoons per 10 kg of slaw). Now the cabbage must be transferred to a large container (preferably in an enameled pan without chips), and tamped well. In the middle of the cabbage mass, place dill wrapped in gauze or a bandage. Dill will give the cabbage a piquant flavor, in addition, it has antibacterial properties, which will prevent the growth of putrefactive bacteria. On top of the cabbage, you can put whole leaves that need to be prepared in advance by removing them from the washed heads.

You can not use iodized salt, otherwise the cabbage will be soft.

On top of the cabbage you need to put a wide plate, board or cut plywood (preferably slightly smaller than the diameter of the pan) and put a load (for example, a saucepan of water or a clean calcined stone, a jar of water).

The pan is covered with a towel, but not with a lid, because the cabbage needs to breathe, and left for several days at room temperature (22-23 ° C). The next day after fermentation, the cabbage must be pierced with a wooden stick (morning and evening). They do this in order to release the accumulated gas. And so they release gas every day until the cabbage ferments. The foam from the brine is also removed every day. At a temperature of 22-23 ° C, cabbage is fermented already on the fifth day, if it is cooler in the room where the cabbage is fermented, then the fermentation process will take a little longer. You can control the fermentation process by taking a sample starting from the 3rd day. Ready sauerkraut has a pleasant sour taste and a yellowish-pink color. Now it can be transferred to three-liter jars and put in the cold. In jars, cabbage also needs to be well tamped. Leave some space in the jar, in case your kale isn't fermented and might release some more juice.

There are many different recipes for making sauerkraut, but "grandma's recipe" for crispy sauerkraut is perhaps the best. That is why it is still very popular today, due to the amazing taste of the finished product and ease of preparation.

How to store sauerkraut at home

Ready sauerkraut should be stored in the cold, but in no case in the cold. If fresh cabbage perfectly tolerates short frosts, then sauerkraut, falling into frost, changes its structure and becomes soft and not crispy. If your cabbage has come under the influence of sub-zero temperatures, you need to use it in the near future, otherwise such cabbage will not be stored for long.

Store it in the refrigerator or cellar at +1°C to +5°C.

Sauerkraut - contraindications

The increased content of coarse fiber is also contraindicated in gastrointestinal diseases.

  • 1 glass of 9% vinegar;
  • 1 cup of sugar.

Pickled cabbage is prepared as follows:

  1. Cabbage is cut into arbitrary pieces or squares. Garlic should be left whole. Beets must be peeled and cut into slices.
