For 230 grams of crispy, fantastically tasty baked goods, you need:

Flour - 140 g (whole grain spelled here, but any will do)
Salt - 0.5 teaspoon
Sugar - 1 teaspoon
Baking powder - 0.5 teaspoon
Flax seeds - 3 tablespoons
Sesame seeds - 1.5 tablespoons
Ground nuts (any) - 1.5 tablespoons
Ground pumpkin seeds - 1.5 tablespoons
Vegetable oil - 20 ml
Milk (can be replaced with water) - 80 ml
Ground pepper
Herbs: oregano, rosemary, thyme, sage

We mix all dry ingredients

Add vegetable oil and milk (water)

You may need a little more flour, depending on the type of flour. The dough should be manageable, well behind the hands and work surface.

After kneading, wrap the dough in foil and put it in the refrigerator for 30 minutes. If it is not possible to bake after 30 minutes, then you can leave the dough in the refrigerator until the next day, for example.

This amount of dough makes two baking sheets of cookies.

Once I was at a tasting in a pastry shop, where they gave me a taste of such cookies. It really melts in your mouth and is very delicate, French, crunchy. And before that, it always came out a little hard, not so delicious whether... And this time everything worked out with a half-turn. That would be with a puff like this, eh ((((

I realized my mistake: when I mixed flour crumbs (flour, ground with butter) with liquid (yolks + a drop of water), it always seemed to me that the liquid was too small. I began to think that the apartment was dry, which means that flour requires more liquid and blah-blah-blah ... And this time I literally caught myself by the hand so as not to add more water, but continued to squeeze the crumbs with my hand. I just collected it with my hands and clenched it in a fist. And, lo and behold! In the next seconds (not even minutes!) The crumbs began to stick together and very quickly gathered into a lump. It really took a few seconds. the dough did not even have time to warm up from the warmth of the hands. This is how beautiful it turned out

Because it was still cold, but already plastic (the most correct moment !!!), I did not remove it in the cold, but immediately rolled it out to the required thickness between the sheets of parchment. The dough rolled out easily, did not crack or break. Super!


In general, I was very, very pleased!

Now about the cookies. It is not entirely simple in taste. The test includes

large salt. But this does not make the cookies salty. It stays sweet. And grains of salt only rarely come across, and then the taste plays interestingly.

Shortbread(sablée) With salt
(30 pcs d5cm)

200 gr premium wheat flour
100 grams of cold butter (delicious!)
100 gr icing sugar
2 g baking powder
40 gr egg yolks (2 pcs.)
10 grams of cold water
a pinch of coarse sea salt

to cover:
1 yolk
a pinch of fine sea salt


  • Sift flour along with icing sugar and baking powder. Add salt, stir to distribute evenly. Put in the freezer for 30 minutes.

  • Chop cold butter into 1x1cm cubes. Put in the refrigerator.

  • Mix the yolks with cold water. Put in the freezer for 30 minutes.

  • Rub the cold butter and flour mixture with your hands until crumbs. Pour in the yolks with water and quickly knead the dough: collect the crumbs in your hand and squeeze. As a result, the crumbs themselves stick together into a ball.

  • Roll out between two layers of parchment to 4mm. Put in the freezer for 15-30 minutes. During this time, the dough will rest and become firm. If you cut the cookies from cold hard dough, they will retain their shape when baked.

  • While the dough is resting and cooling, mix the yolk with salt. Prepare a cookie cutter and a smear brush. Cover the baking sheet with baking paper. Turn on the oven at 150C.

  • Cut cookies from cold dough. Put on a baking sheet in a checkerboard pattern. Collect the cuttings, roll them out again and cut them out. If the cookies are already warmed up, then put them in the freezer for 10 minutes.

  • Brush with yolk and salt. Refrigerate for 5 minutes.

  • Brush with yolk and salt a second time. Make a pattern with the back of the fork.

  • Place the cookies in the freezer again for 5 minutes.

  • Bake for about 15 minutes or until browned. Cool on a baking sheet.

How to Make Simple Homemade Salted Flaxseed Cookies

1. In a bowl, combine sifted wheat flour, baking powder, salt, sugar and flax seeds.

2. Stir the dry mixture thoroughly with a spoon.

3. Add vegetable oil to the dry flour mixture (oil must be used without smell, otherwise it will not be tasty).

4. Pour in cold milk and knead the dough. At first, the dough will crumble and won't clump well. It needs to be kneaded for 5-7 minutes, after which a dense lump will turn out. The dough should be approximately the same as we knead on dumplings.

5. Here is such a wonderful dough. Wrap the resulting dough in plastic wrap and refrigerate for 20-30 minutes.

6. After the time has elapsed, remove the dough from the refrigerator and roll it into a layer about 0.5 cm thick. If rolled out thinner, the cookies will be completely crispy, if thicker, they will be soft inside. Cut into cookies of any shape.

7. Cover a baking sheet with baking paper, lay out the cookie cutters. Pierce each piece with a fork in several places.

Bake cookies in a preheated oven, at 180 degrees, for 20-25 minutes, focus on your oven. The cookie should have a slightly ruddy color. My oven on top does not blush the pastries well, after 15 minutes of baking, I turned the cookies over and baked on the other side for another 10 minutes.

Serve cookies for tea or coffee.

350 gr melted margarine

100 g vegetable oil

Half a dessert spoon of salt

1 tbsp lemon juice

1 tsp honey

1 egg (separate white and yolk)

1 sachet baking powder

3.5 or 4 cups flour

All ingredients, except flour, baking powder and yolk, mix well, add sifted flour with baking powder, knead the dough and leave it for two hours (no more and no less!)

Form bagels from the dough or squeeze cookies of various shapes, grease with egg yolk on top, sprinkle with poppy seeds or sesame seeds (it is better to pre-fry the sesame seeds, it will be much tastier) and bake at 175 degrees in a preheated oven for 20-30 minutes.
