A simple seedless dogwood jam recipe

How to separate the seeds and make berry jam? The following recipe is about this.

Ingredients:

  • 1 kg of berries
  • 1.5 kg of granulated sugar,
  • 3 g citric acid
  • 0.5 liters of boiled water.

Preparation:

  1. Select ripe berries, rinse well, sort out and separate the seeds. To do this, the berries must first be poured with boiled water in an enamel bowl and boiled over low heat for about half an hour. The flesh will soften and the pitting process will be easier.
  2. Strain the broth and wait for the berries to cool. Then rub them through a sieve.
  3. Add the resulting puree to the broth and add sugar. Usually the proportion of sugar and decoction with pulp is 1: 1, but you can change the amount of sweetener to taste.
  4. Put the basin on low heat and cook, stirring and skimming. Add citric acid.
  5. When the volume of liquid has decreased by about a third, the jam is ready.
  6. Pour the resulting product into sterilized jars and roll up.

Dogwood jam with seeds

Since the process of separating the berry pulp is quite laborious, you can cook jam from whole berries.

Ingredients:

  • berries - 1 kg,
  • sugar - 1.5 kg
  • water - 0.5 l.

Preparation:

  1. Take whole fruits, separate them from the branches and rinse well.
  2. Prepare the syrup: pour granulated sugar into a saucepan, add water and place on the stove. Heat until transparent until sugar dissolves. Stir the syrup periodically.
  3. Transfer the prepared berries to an enamel bowl or saucepan. Pour boiling syrup over them and leave.
  4. After 4 hours, put on low heat, bring to a boil and cook for 10 minutes, stirring gently so as not to damage the berries.
  5. Remove the basin from the heat and check the jam for readiness. To do this, take a drop of berry syrup and place on a dish. If, after cooling, the drop has not lost its shape, then the product is ready.
  6. If necessary, boil additionally 1-2 times within 5 minutes.
  7. Sterilize the jars, pour over the jam and roll up. Turn containers upside down and wrap until they cool completely.
  • It is better to store dogwood jam in a cool dark place (refrigerator or cellar).
  • The southern gift ripens from August to October. It is at this time that the cornel is harvested and a natural product is prepared from it.

  • It is not recommended to eat the product at night, as dogwood jam is a powerful energy drink. Care should be taken when using people with high blood pressure.

In general, I do not belong to the type of people who unrestrainedly and selflessly love jam. Currant and raspberry are especially unpopular in my house, apparently since childhood everyone has eaten it. But if some unusual berries or fruits appear in my hands, then God himself ordered to cook jam from them. So, today, together with the WomanOnly kitchen, we cook dogwood jam according to traditional recipes.

For jam, you need to take an incompletely ripe dogwood, otherwise it will choke heavily and turn into porridge. This can be determined by its appearance - a strongly ripe dogwood has a bright red color, it is soft to the touch and easily bursts. Therefore, take the one that is firmer, it should taste sweet and sour, this will give the jam a special flavor.

Dogwood jam: recipe 1

Very important: when cooking dogwood jam, the berries do not need to be pricked - they themselves will crack in the process.

  • Cornel 1 kg
  • Sugar 1-1.5 kg (depending on your preference and the degree of acidity of the dogwood)
  • Water 2 cups

1. Wash the berries, remove all leaves / tails, bad and crushed berries, then spread the dogwood on paper towels.

2. Choose a saucepan (preferably thick-bottomed stainless steel). Keep in mind that it is more difficult to cook jam on stoves with touch panels than on ordinary old burners, because such a simmering effect cannot be achieved.

3. Pour 2 cups of water into a saucepan (slightly less) and add 1-1.5 kg of sugar, stir and put on fire, bring to a boil. Do not forget to stir, stir the sugar especially actively at the bottom - otherwise it will thicken. Boil the sugar syrup for 5 minutes (check that all the sugar has dissolved).

4. Now we proceed to the berries - carefully put the dogwood in the syrup with a spoon or slotted spoon, bring everything to a boil, and then reduce the heat. Boil the future dogwood jam for 10-15 minutes (do not forget to stir) and remove from heat.

5. Leave the saucepan with the jam on the table for 12 hours, then put it back on the fire, bring to a boil, boil for 3-5 minutes and remove. Let it stand again for 12 hours and repeat this procedure.

Do not forget to remove the foam formed during the boil.

That's all, ready!

If your jam is too runny (the drop spreads and flows), add a little sugar and boil again. But keep in mind that the jam will heal a little during storage.

6. Pour into jars and roll up lids.

Despite the fact that this version of dogwood jam is three-stage, it is very simple and quick. Another significant plus: the berries do not boil during stage cooking.

Pitted dogwood jam: recipe 2

  • 1 kg dogwood;
  • 1 kg of sugar;
  • 1.5 glasses of wine or water.

I do not like to remove seeds, but nevertheless, if you like to eat homogeneous jam, and not choose berries from it, then this option of seedless dogwood jam is for you.

1. Put the berries on a tray, take a glass, crush each berry with the bottom and remove the seeds from the pulp. Keep in mind that all the juice from the berry will also be squeezed out, so be sure to do this either on a tray with rims or on a plate in order to drain the juice into a saucepan.

2. After all the dogwood berries have been peeled and placed in a saucepan, add a kilogram of sugar to them. Stir and leave on the table for 2 hours.

3. Now add wine or water to the future jam. Alcohol from the wine will evaporate during cooking, and the jam will be more tart. But if you don't want to risk it, top up with water.

4. Bring the jam to a boil over medium heat and simmer for 5 minutes, remove from heat. Then do the same 2 more times with an interval of 12 hours. In general, the same step system as in the first recipe.

5. After the last boil, place the jam in clean, dry jars and cover with lids.

I think that this method cannot be called a full-fledged jam.

Just take the dogwood, grind it on a sieve so that all the pulp separates from the seeds and turns into something like a puree. Alternatively, first remove the seeds and chop the pulp in a blender. Then add sugar in the proportion 1 kg of raw material: 1.5kg of sugar... Leave on the table for a day, stirring occasionally. After that, put them in the jars and roll them up.

Dogwood jam for the winter without sterilization - a step-by-step recipe with a photo:

We start to cook dogwood jam with syrup. Mix in a bowl or saucepan (in which we will prepare the jam) 1 kg of granulated sugar with some water according to the recipe.

After mixing the sugar mixture, we send it to the stove. While stirring, simmer the syrup at a slow boil until it becomes transparent.

With a small amount of liquid, the dogwood can be pricked in several places with a toothpick. This will prevent the fruit from cracking during cooking.

We send the dogwood in boiling syrup, mix. Then we remove the bowl from the stove, put it on the table to cool.

After 6-8 hours, we send the cooled jam back to the oven. Pour the remaining 300 g of sugar into a bowl with dessert. After thoroughly mixing the sugar, boil the jam for 15 minutes at a moderate boil.

A head of foam rises above the surface of the dogwood jam. We make sure that the jam does not "run away" over the edge of the dish.

When cooking from above, collect a little foam, but it is not necessary to remove all the foam now (in subsequent boiling, the amount of foam will be significantly reduced).

After 10 minutes of cooking, remove the dogwood jam from the heat. We leave the jam alone until it cools completely (8-1 2 hours).

At this time, we catch the foam between the berries. The last time it is enough to boil dogwood jam for 5-7 minutes.

Dropping a small drop on the saucer, we watch her.

Determine the readiness of the dessert drop by drop.

The droplet is held by a bead, which means it is ready. As soon as the drop is held without spreading on the surface of the saucer, we pack it into jars for storage for the winter.

Pour hot, boiling jam into prepared sterilized containers, seal tightly. We turn the jars onto the lids until they cool.

Dogwood makes a delicious and unusually beautiful dessert. In winter, having opened a jar, we will be happy to enjoy tea with sweet and sour and aromatic dogwood jam.

Has an antibacterial effect, normalizes blood pressure, strengthens the walls of blood vessels, increases the level of hemoglobin in the blood. Helps bring down body temperature in case of fever.

These features are widely used in the treatment of many diseases, for example:

  • avitaminosis;

  • hypertension;
  • flu and acute respiratory infections;
  • gout;
  • stomatitis;
  • eczema, etc.

The benefits of dogwood jam with seeds

The use of dogwood jam with seeds is the high content of pectin, which helps to remove harmful toxins from the body. Since the bones are less susceptible to loss of beneficial qualities during heat treatment, such a delicacy will bring maximum benefit. It is also useful for improving the gastrointestinal tract.

Unfortunately, some of the valuable properties of berries are lost during cooking. In order to minimize losses, it is necessary to shorten the heat treatment time.

But at the same time, do not forget about the harmfulness of the fruit. It is contraindicated for pregnant and lactating women, with individual intolerance, excitable nervous system, gastritis, diabetes, increased blood clotting, as well as people suffering from insomnia, as they excite the body, giving it a boost of energy. Excessive consumption of dogwood jam leads to flatulence, diarrhea, kidney disease and weight gain. Any food with the addition of cornel is not compatible with the simultaneous use of drugs.

When using jam as a traditional treatment, it is recommended to avoid Jamaican dogwood, as it is potentially highly toxic and contraindicated in food. It is prescribed exclusively in extreme cases of acute diseases and only under strict medical supervision in precise dosages.

If you are not spared by a single virus, and an ordinary cold lasts for several weeks, do not rush to swallow questionable antiviral drugs in batches. It is better to use a remedy, the effectiveness of which has been proven by the experience of our ancestors. This is dogwood jam. What is its use, and what recipe to choose for the preparation of the "medicine"?

Cornel harvest for health improvement

Shaitan berry or dogwood are healing fruits of bright red color. Skillful housewives make a lot of goodies out of them - liqueurs, jams, compotes, marmalade and other mouth-watering sweets. But the most valuable for its medicinal qualities is dogwood jam. Its benefits extend not only to the case when a person is unlucky enough to catch the flu or cold. It is much wider.

The fact is that the pulp of such berries contains a large number of substances that have a healing effect and are involved in vital processes in the body. They contain a record high amount of vitamin C. That is why jam effectively relieves ARVI symptoms.

Dogwood berries are rich in organic acids (up to 3.5% citric, succinic, malic), natural sugars (17%), flavonoids (5%). Nature has supplied these fruits with other "benefits" - vitamins A, P, E, pectin and tannins, phytoncides, nitrogenous compounds, minerals - magnesium, iron, potassium, sulfur, calcium.

Of course, raw berries are considered the healthiest. But they can be stored for only twelve days, and then become hazardous to health. As a result of heat treatment, some of the valuable components will be lost, but the jam will still retain its therapeutic characteristics. True, they will only show up if such a product is regularly consumed.

Effects of dogwood jam on the body:

  • will increase the immune defense;
  • help to avoid contracting viral infections during the cold season;
  • relieve the symptoms of flu and respiratory infections;
  • cleanse the bronchi from mucus;
  • stop coughing;
  • will lower the temperature;
  • will support the heart;
  • will help keep blood vessels healthy;
  • normalizes stool (with upset stomach);
  • will improve the work of the intestines;
  • prevent the development of sclerosis;
  • stabilizes high blood pressure;
  • will increase hemoglobin indicators;
  • prevent the appearance of liver disease;
  • will help in the treatment of skin diseases;
  • eliminate headache;
  • tones up, invigorates;
  • will contribute to weight loss (as it will speed up metabolic processes).

Important! The benefits of jam will be even higher if the seeds are not removed from the berries. They contain pectin, which removes toxic substances from the body. But such preservation will have to be eaten within one year. It cannot be stored for more than 12 months!

A spoonful of jam three times a day: what can be treated in this way?

Although doctors do not prescribe dogwood jam as a medicine, they do not deny its medicinal properties. And connoisseurs of traditional medicine advise using such a delicacy as a means of prevention and to improve the condition in many diseases.

Diseases for which dogwood jam helps:

  • anemia;
  • gout;
  • vitamin deficiency;
  • hypertension;
  • eczema;
  • stomatitis;
  • bronchitis;
  • diarrhea;
  • ARI, flu;
  • stomach infections;
  • sinusitis;
  • scarlet fever;
  • venous insufficiency;
  • cystitis;
  • swelling of the lower extremities;
  • joint diseases.

Can dogwood jam harm, and to whom?

Such a product is not capable of causing side effects or leading to the development of any disease. There is only benefit to a healthy person from eating dogwood jam, and harm is possible only in one case - if the berries were collected from bushes growing in an ecologically unfavorable zone.

And yet, dogwood jam has contraindications. It is better to refuse to use it for those who have been found to have increased acidity of gastric juice. You should not include a treat in your diet if a person suffers from constipation, because dogwood has an astringent effect even after heat treatment.

Patients with diabetes should also exercise caution in the use of such a product. Before introducing it into their menu, it is better for them to consult with their doctor. Canned dogwood is absolutely contraindicated in case of individual intolerance to fresh berries.

How to make the best and healthiest jam?

There should be only two ingredients in the dogwood jam - dogwood and sugar. The calorie content of this product per 100 g is 248 Kcal. The delicacy has a very pleasant sweet and sour taste.

Where can I get such a delicacy? You can buy a manufactured product, but for a small jar you will have to pay from 300 rubles. If there is an opportunity to purchase fresh berries or this plant "lives" in your country house or garden plot, prepare the jam yourself.

The most correct recipe for making dogwood jam:

  1. Take 1 kg of berries, sort them out, discard the spoiled ones, rinse, dry on a paper towel.
  2. Dip the berries in a soda solution for 2 hours. This trick will allow you to keep them intact, they will not "wrinkle" or burst during heat treatment.
  3. Rinse the fruits well.
  4. Make a syrup: boil 0.5 liters of water in an enamel bowl, add 1.2 kg of granulated sugar, stir until it is completely dissolved.
  5. Gently fold the dogwood soaked in baking soda into a saucepan, pour over the syrup.
  6. Leave the mass for 4 hours. Then put on the stove, bring to a boil, reduce heat, boil for 5, maximum -10 minutes, remembering to remove the foam.
  7. Boil the treat 3 times at intervals of 8-10 hours.
  8. Pour the jam into clean jars, cork.
  9. Healing jam is ready!

Important! Do not stir the jam with a spoon! It is enough to shake it slightly. It is not recommended to boil the delicacy for a long time, as this will reduce its "medical" properties, and the berries will lose their juiciness.

Rich chemical composition of berries

The benefits of any product are due to its mineral and vitamin composition. As for the dogwood, it is famous, first of all, for its high content of ascorbic acid. In its concentration, it surpasses even black currant and lemon. Also, cornel berries contain vitamins E and P, provitamin A (carotene). The mineral composition is dominated by iron, calcium, potassium, sulfur and magnesium. Among biologically active components, organic acids, tannins, glucose and fructose, essential oils are distinguished.

As you know, during cooking, useful substances are partially lost. In order to preserve them as much as possible, it is necessary to shorten the duration of heat treatment. Below you will find recipes for making jam that can help you minimize the loss of vitamins and minerals. The result is not only tasty, but also a healthy treat.

Help with colds

Since cornel jam contains a lot of vitamin C, as well as other substances that can have an antibacterial effect, it copes well with various symptoms of colds. In this case, it is often used in the same way as honey. It is useful to use jam with warm drinks - tea, milk, herbal decoctions, for a speedy recovery. You can also act for prevention. But in this case, there are no strict rules. To protect yourself from colds, eating jam in reasonable amounts throughout the cold season is enough. You can simply spread it on fresh crispy buns, add to porridge, cottage cheese, desserts, serve with tea, etc.

General strengthening of the body

Since the berries and leaves of the dogwood are rich in biologically active compounds, they are used in folk medicine for the preparation of medicinal products.
