1. Although Chinese chefs believe that it is not necessary to cut off the nose and tail of the cucumber, we will nevertheless remove them. Cut the cucumber lengthwise.

2. Put a wide knife on each half and hit the knife hard with your fist.

If the cucumber has large seeds, then it can be cleaned from the seed nest.

3. Chop the broken cucumber coarsely. Try to cut into diamonds.

4. Just like with a cucumber, you must do with garlic. First crush with a knife, and then cut.

You can put a lot of garlic, the sharpness of cucumbers will depend on it. It is optimal to take 4-5 cloves.

The Chinese have great respect for cucumbers and strive to add them to any dish they can. However, in an independent form they are also extremely loved. Proper cucumbers and how to process them

In order for the "Broken Cucumbers" in Chinese to please you, you first need to competently approach the choice of a vegetable. Forget prickly, strong babies, you need cucumbers from long-fruited varieties.

Now about their processing. The name “Broken Cucumbers” already contains a hint: the vegetable needs to be beaten well. Two approaches are possible here. According to the first version, it is enough to peel the cucumbers with a rolling pin or a wooden hammer in one piece. But we are closer to the second version. It is no secret that a long vegetable has rather large seeds. And in a snack, they will definitely be superfluous. So it’s better to cut the cucumber lengthwise and scrape out the “insides” with a knife, as they do with pumpkin and melon. After the vegetable is placed cut down and processed with a tool until it cracks (but not to a porridge-like state!). Beating is necessary for better impregnation of vegetables with marinade.

Next, the workpiece is coarsely cut obliquely, salted and left for ten minutes. The released juice is drained (some chefs even advise squeezing it out), and the Broken Cucumbers are seasoned with a pre-prepared sauce. Nothing else is included in the original appetizer except for him and the vegetable itself.

"Broken Cucumbers": Dressing Recipe No. 1

Pay attention to offers several options for refueling. For the first, you need to combine black vinegar in the amount of three tablespoons and add two tablespoons of vegetable oil to them. Preference should be given to peanut. Then two spoons of liquid natural honey and one spoon of sesame oil are introduced. In order for the “Broken Cucumbers” to be spicy, four crushed garlic and dried chili are added to the marinade. It is taken at the discretion of the chef. After dressing, the appetizer is aged in the refrigerator for at least a quarter of an hour.

Refueling No. 2

With it, “Broken Cucumbers” become more accessible - nothing exotic is included in the sauce. It is required to combine vodka, soy sauce, vinegar and vegetable oil in equal amounts. To preserve authenticity, it is still recommended to take sesame oil (it will be a little worse with olive, and with sunflower it will turn out delicious, but primitive). Vinegar is desirable to buy rice; if not possible, replace it with lemon juice.

Third version

In this dressing, the differences from recipe No. 1 are small, but significant. With it, you will get completely different "Broken Cucumbers". The recipe includes oyster and soy sauces with black (apple) vinegar, taken on a spoon. Garlic for such a volume requires three cloves, sesame oil will go half a spoon. Plus chili pepper, sugar and salt of your choice.

Alternative cooking method

If all the previous ones implied portioned cooking, then this option requires almost a kilogram of cucumbers. They are cut coarsely; in parallel, a good bunch of dill and eight garlic cloves are chopped as finely as possible. For dressing, mix half a glass of soy sauce, a spoonful of sugar, two - vegetable oil, three - apple cider vinegar and half a spoonful of ground red pepper. Black is taken to taste, as well as salt. All this is placed in a tight bag, shaken well and only then beaten off with a rolling pin. An hour of cooling - and "Broken cucumbers" are ready.

Chinese salad

It is based on cucumbers picked according to traditional rules. Squeezed from the juice, they are placed in a salad bowl and supplemented with chopped garlic and chopped rather coarse cilantro. The dressing is light soybean oil and black rice vinegar - just a spoonful. The composition is supplemented with half a spoonful of hot oil and sugar (a little). Smashed cucumbers are nothing more than cucumber salad, but with an unusual combination of ingredients and soy sauce dressing. The most successful salad is obtained from large, juicy cucumbers with a lot of pulp. The middle with seeds is cut out, leaving only dense pulp near the walls. After slicing, the cucumbers are marinated with soy sauce, vinegar and aged for at least an hour, but it is better to leave for three hours or overnight, putting them in the refrigerator. And cucumbers get their final taste after adding garlic, herbs, hot peppers and oil. The oil in the original Chinese recipe for beaten cucumbers is recommended to use sesame, but in our conditions you can replace it with a more affordable olive or sunflower oil. Believe me, this dish will become a hit among yours.

Ingredients:

- large cucumbers - 2 pcs. or 3 medium cucumbers;
- dark soy sauce - 2 tbsp. l;
- rice vinegar - 1 tbsp. l;
- sesame or olive oil - 2 tbsp. l;
- salt - to taste;
- sugar - a pinch;
- garlic - 2-3 large cloves;
- hot pepper - 0.5 pod (to taste);
- green cilantro or parsley - a few branches.

Wash cucumbers well under cold water, dry and cut off the tips on both sides. Cut in half lengthwise.





Then, using a teaspoon with a sharp spout, cut out the inside of the cucumber, select the pulp with seeds. We leave a little near the peel, about 1-1.5 cm on each side. We discard the cut-out pulp, we will not need it (or we use it in other salads, in okroshka).





Turn the cucumber boats cut side down. We cover with a plastic bag and hit the handle of the knife several times so that the cucumbers become softer and give more juice. We cut the broken cucumbers into half rings 0.5-1 cm thick.





Transfer to a deep bowl. Sprinkle cucumber slices with rice vinegar, salt, season with a pinch of sugar. Leave for a few minutes for the salt and sugar to dissolve. Add soy sauce.







Thoroughly mix the cucumber salad. Cover, put in the refrigerator for at least an hour. Stir several times so that the cucumbers evenly absorb the marinade.





Shortly before serving, add finely chopped garlic, chopped cilantro or parsley to the cucumber salad. Season with hot pepper, cut into small cubes, or add a couple of pinches of chili powder. We mix everything.





Drain off excess marinade. We dress the salad with vegetable oil. We taste, adjust if necessary. At this stage, you can add sesame seeds by drying them in a dry frying pan until golden brown.





We shift the salad into a tall bowl and serve the beaten cucumbers slightly chilled with fried meat, boiled rice or potatoes. Bon appetit!

Cut diagonally into large pieces.

Salt cucumbers, add vinegar and let stand for 15-20 minutes

Take out the cucumbers and squeeze them well. Combine with shrimp. Add soy sauce. Mix. You can add a pinch of sugar if you like. Sprinkle with sesame seeds.

Prepare a salad of beaten cucumbers with cilantro. In Asian countries, before preparing cucumber salad, it is customary to break the fruits with a knife laid flat on top. Beaten cucumbers are better saturated with spices and the taste of the salad is more saturated.

We will need:

  • Cucumbers, preferably long or medium fruits: 0.5-0.6 kg;
  • Carrots - 90 g;
  • Cilantro and (or) green onions, parsley: 20 g;
  • Garlic: 3-4 cloves;
  • Spices - 2 tsp (pepper, ground, black and red hot, coriander, ginger);
  • Salt - to taste;
  • Vinegar (9%): 20-30 ml;
  • Vegetable oil - 50 ml;
  • Soy: 20-30 ml;
  • Sugar - 20 g.

How to cook:

1. Cucumbers are washed and cut off the tips.

2. A knife blade is laid flat on each cucumber and beaten at half strength. The cucumber should burst, but not shatter into small fragments.

3. After that, the cucumbers are cut into pieces 3-4 cm in size.
