Being in an eternal search for all sorts of interesting salads, I somehow came across such an interesting name - “Leshy”; I didn’t understand why the salad was called that, but the fact that the “Leshy” salad is very tasty, it’s a hundred percent hit. Preparing a salad is as easy as shelling pears, so everyone can handle it for sure. For the base you will need chicken fillet, it can be boiled or baked - whichever you prefer. The salad also includes mushrooms, onions, a little cheese and chicken eggs. All the ingredients together give a simply incomparable result. For freshness, fresh dill is added to the salad; it is better to use homemade mayonnaise. My detailed recipe with photos will help you prepare it step by step easily and quickly. I also suggest you prepare the famous one.



- chicken fillet – 1 pc.,
- champignons – 200 gr.,
- onion – 1 pc.,
- chicken eggs – 2 pcs.,
- hard cheese – 80-100 gr.,
- vegetable oil – 30 ml.,
- salt, pepper - to taste,
- homemade mayonnaise – 2 tbsp.,
- fresh dill – 1 bunch,
- olives - for decorating the salad.

Recipe with photos step by step:





Immediately throw the chicken fillet into the pan to cook. Also wash and chop the champignons, transfer the mushrooms to a frying pan heated with vegetable oil.




Peel and rinse the onions, cut into small cubes and add the onions to the mushrooms. Fry mushrooms and onions for 10-12 minutes until tender.




Boil chicken eggs for 8-10 minutes, cool in cold water, and peel. Cut the eggs into medium-sized cubes and place in a deep salad bowl.




Tear the chicken fillet into pieces and add after the chopped eggs.






Grate the hard cheese on a medium grater, add the cheese shavings to the salad bowl.




Place the fried mushrooms in a container with the ingredients.




Rinse fresh dill, chop finely and add to the salad, also add a few spoons of homemade mayonnaise. Season the salad with salt and pepper to taste.




Mix the ingredients and take a sample.






Place a glass in the center of a flat plate and arrange the salad in a circle. Before serving, garnish the salad with olives, remove the glass and serve the salad. I suggest you also prepare this equally delicious

The simple “Leshy” salad will be an excellent solution for both holidays and everyday life. It is prepared from ordinary ingredients - and how delicious it is!

  • Chicken fillet – 200 g

  • Boiled eggs - 2 pcs.
  • Olives, Herbs, Walnuts - to taste
  • Onions - 1-2 pcs.
  • Hard cheese - 100 g


We wash the champignons, peel them and cut them into slices, and then fry them in vegetable oil.


Finely chop the onion and fry it until golden brown.


Cut the boiled chicken fillet into cubes.


Grate the boiled eggs and hard cheese on a coarse grater, combine them with the chicken fillet.


Top with mushrooms and onions.


We also add finely chopped nuts. Then season the salad with mayonnaise and mix everything thoroughly.


Place a glass in the center of the dish in which the salad will be served. Spoon the salad around in a circle.


Gently compact and remove the glass.


We decorate the salad with black olives, olives and herbs.

Recipe 2: Leshy salad in layers with pickled cucumbers and champignons

Layered salad, which is found in different sources under different names: “Forest stump”. “Autumn”, “Oak”, and I like this name. The salad is very harmonious and balanced in its combination of flavors.

  • Potatoes medium 2 pcs.
  • Mayonnaise
  • Chicken breast (fillet) ½ pcs.
  • Dill for decoration
  • Pickled cucumbers (6-8 cm) 3 pcs.
  • Mustard ½ tsp.
  • Marinated champignons 100 g
  • Black pepper
  • Egg 1 PC.

Boil the chicken fillet. We also boil jacket potatoes and hard-boiled eggs.

Cool the meat

Cut into small cubes, add black pepper, salt (if you didn’t add salt during cooking) and mustard. Mix and leave.

We also cool and peel the potatoes.

I will be assembling the salad on a plate, so I put up the sides. You can simply collect it in a salad bowl. Grate 1 potato (the larger of the 2) on a coarse grater and place it in the first layer of lettuce. Lubricate with mayonnaise

Place chopped chicken breast on top and also grease with mayonnaise

Grate the cucumbers and squeeze out the liquid. Place a third layer on the salad, grease with mayonnaise

Set aside the marinated champignons to drain the marinade. Then finely chop.

We spread the mushrooms in the 4th layer, grease with mayonnaise.

I removed the sides for the photo to make it easier to see. Lubricate the layer with maonnaise

Grind a boiled egg, place it on a layer of mushrooms (this will be the 5th layer) and lightly grease it with mayonnaise (I didn’t grease this layer)

The last, final layer is the second potato, grated.

Lubricate the top of the salad well with mayonnaise and decorate with dill, which resembles pine needles.

And this is a version of the portioned Leshy salad in a glass. The layers are also laid out and also lightly greased with mayonnaise.

Recipe 3: Classic Leshy salad

  • Chicken fillet 200 gr.
  • Champignons 200 gr.
  • Onion 1 pc.
  • Hard cheese 100 gr.
  • Eggs 2 pcs.
  • Walnuts 50 gr.
  • Mayonnaise 5 tbsp.
  • Olives 13 pcs.
  • Greens 1 bunch.
  • Vegetable oil 2 tbsp.

Ingredients. Pre-cook the chicken fillet and eggs.

Roughly chop the champignons and onions.

Pour vegetable oil into a frying pan and heat over high heat, then reduce to medium and fry the champignons.

Then add onions to them and fry until tender. Then place the pan in cold water to cool it faster.

Using a grater with large holes, grate hard cheese and eggs. Set aside some of the cheese separately for decoration.

Cut the chicken fillet in any order.

We clean the walnuts from shells and partitions, chop them with a knife. Place the prepared ingredients into a large mixing bowl - chicken fillet, eggs, cheese, walnuts.

Greens - parsley, dill or green onions (whatever you have) finely chop and add to the same plate.

Season the salad with mayonnaise and mix. Then taste for salt, add salt if necessary and stir.

We take a dish on which we will serve the salad. Place a glass in the center and place the salad in a heap in a circle, tamping it down with a spoon.

Then, carefully turning it in a circular motion, remove the glass.

Decorate the salad. First, spread the hard cheese that we saved for this on all surfaces.

Cut the olives lengthwise into two parts. Visually divide the salad into 5 segments and arrange flowers from the olives, gently pressing them into the salad. You can first lay out the top 5 petals to distribute them evenly over the surface of the salad, and then the rest of the petals.

We decorate the free space between the flowers with herbs; if you have parsley, lay out leaves or sprigs of dill. I have green onions, I cut them about 5 cm long and laid them out a few at a time.

I used finely chopped tomato to decorate the center of the flowers, you can use red pepper or sweet corn for the yellow center. I did not include them in the ingredients.

Leshy salad is ready and ready to serve. After the photo session, the thought came that it was possible to also build a flower in the center at the bottom of the dish. But everything has already been done))). Bon appetit.

!!! Before putting the salad on the plate, taste it, I didn’t have enough cucumber for freshness, so I added it. Although there are no comrades in taste and color, so try and think whether you have enough in the salad.

How to prepare Leshy salad with other products?

For cooking, you can take either smoked chicken (leg) or a more dietary boiled chicken breast. It is better to take mushrooms for this salad: champignons. In any form? Focus on your taste.

The original recipe calls for marinated whole champignons, which need to be cut into quarters and added to the salad. However, you can get creative and add not pickled, but lightly fried champignons with onions.

Recipe 4: Leshy salad with corn and pine nuts

A very satisfying salad made from available ingredients. Unless, of course, you have wild mushrooms. A small handful of pine nuts adds a special note to the taste. Help yourself!!!

  • Mushrooms (Fried forest) - 250 g
  • Chicken egg - 4 pcs
  • Corn - 1 ban.
  • Pine nuts - 1 handful.
  • Sour cream (to taste) - 30 g
  • Mayonnaise (to taste) - 30 g
  • Green onion - 1 bunch.
  • Black pepper (ground)

Fry wild mushrooms in a small amount of oil, add salt to taste and add your favorite spices as desired. I sautéed the mushrooms in ghee with chopped red onions. My mushrooms were frozen, already boiled and chopped. I defrosted them first. Boil the eggs hard. Cool the eggs and fried mushrooms.
Place mushrooms in a salad bowl, corn from a jar (drain the liquid), chop eggs.

Chop a bunch of green onions, add salt and pepper to taste. Add sour cream and mayonnaise.

Mix.

And the final touch is a handful of pine nuts. You don’t have to add it, but with nuts the salad becomes festive. Stir and serve.

Leshy salad recipe

Cut the onion into small cubes and fry in vegetable oil. Cut the chicken fillet into small cubes. Peel the eggs and grate them on a coarse grater. Finely chop the champignons. Also grate the cheese on a coarse grater. Combine it with eggs and fillet, onions and mushrooms.

Grind the walnuts and add to the salad mixture. Add salt, season with mayonnaise and mix everything thoroughly. Place a glass on a large flat plate (directly in the center). Carefully place the salad along the entire perimeter of the plate around the glass.
