Lapshevnik is an old Russian dish. It was prepared by our mothers and grandmothers. Cooking it is quick and easy. Noodles is good because it can be made from pasta left over from dinner. Any pasta is suitable for making noodles: spirals, noodles, vermicelli, horns, spaghetti. Noodles can be both salty and sweet. It turns out delicious, satisfying and beautiful!

To prepare pasta noodles, we need the products indicated in the list.

Finely chop the dill.

Boil pasta in two liters of water. Ready to recline in a colander.

Pour milk into a container, beat raw eggs, add sugar, salt and finely chopped dill. Mix thoroughly.

Grease the bottom and sides of a baking dish with butter. Put the boiled pasta into the mold.

Pour milk mixture into pasta. We send to bake in an oven preheated to 180 degrees for 15-20 minutes. Readiness is checked by lightly pressing on the casserole. Ready - easily springy.

Pasta with cottage cheese - a taste familiar from childhood. You can simply mix boiled pasta in a pan with sweetened cottage cheese and fry in butter. And you can make noodles with cottage cheese - a simple, quick and very tasty casserole in the oven.

Ingredients:

  • 300 g cooked pasta or noodles
  • 300 g dry cottage cheese with a fat content of 9% or more
  • 2 medium eggs
  • 2 tbsp. l. Sahara
  • 1 sachet (8-10 g) vanilla sugar
  • a pinch of salt in the curd
  • 1-2 tbsp. l. sour cream
  • 20-25 g butter
  • 0.5-1 st. l. breadcrumbs

This amount of products is designed for approximately 3 servings.

Cooking:

To make noodles with cottage cheese delicious, it is advisable to fulfill two conditions:
1. pasta or noodles should be slightly undercooked
2. cottage cheese and already boiled pasta should be approximately equal in weight.

Boil the pasta in salted water according to the instructions on the package and, following the condition, do not cook a little.

Then drain the water through a colander and lightly rinse the pasta.

I had 300 g of cottage cheese, I took 130 g of dry pasta and got about 300 g of boiled pasta from them.

Break 2 eggs into a cup, add sugar, vanilla sugar, salt and beat lightly with a whisk. Then add cottage cheese.

Mix until smooth.

Cottage cheese can be rubbed through a sieve, but it seems to me that it is better not to do this. Delicate mashed cottage cheese seems to dissolve in pasta and in the finished noodles it feels weaker than granular. Well, it's a matter of taste.

Put the macaroni into the curd mass and mix.

Grease a small baking dish with butter and sprinkle with breadcrumbs or semolina. I am preparing a noodles with cottage cheese in a silicone mold for a cake, which you can not lubricate or sprinkle with anything at all, everything will fall behind perfectly anyway. But I always want to grease the walls and bottom with oil, which I do. Probably, this is an association from childhood, when pasta with cottage cheese was fried in butter.

We spread the pasta with cottage cheese in the form and level them with a silicone spatula.

Smear a tablespoon of sour cream on the surface of the casserole and sprinkle with breadcrumbs. On top lay out 20 g of butter, cut into thin pieces.

We put the form in the oven, heated to 180-190 degrees and bake the noodles with cottage cheese for 35-40 minutes until golden brown.

Cool the finished casserole to a warm state so that it keeps its shape, transfer to a dish and cut into pieces.

  • butter - 40 g;

How to cook sweet noodles with cottage cheese - a recipe with a photo step by step in the oven

First you need to prepare all the necessary components. Although the dish is called "noodles", not only noodles, but also other pasta, such as vermicelli or spaghetti, are suitable for it. It is undesirable only to use very thin and small vermicelli. Cottage cheese can be taken with any fat content. If desired, vanilla sugar or vanillin can be used to give the product an appetizing aroma.

Boil at least 2.5 liters of water. Salt it and place vermicelli or other pasta in a saucepan. To prevent the vermicelli from sticking to the bottom of the pan, it must be stirred from time to time. Cook pasta until done. You can even undercook a little (the main thing is not to digest). After that, drain all the water through a colander, and put the vermicelli back into the pan and brush with oil (take 20 g).

While the vermicelli is cooking, you can do the cottage cheese. It is best to rub it through a sieve. Then beat in the eggs, pour sugar and a pinch of salt (if desired, add vanillin).

Mix cottage cheese well with eggs. Then add boiled, slightly cooled vermicelli to it and mix everything well.

Grease a suitable form with half of the remaining oil and sprinkle 1 table. a spoonful of crackers. Put the prepared curd-vermicelli mass into the mold. Smooth the top and brush with sour cream. Sprinkle the noodles with breadcrumbs. Cut the remaining butter into small pieces and arrange them on top. You can do it differently: melt the butter and sprinkle it over the top of the casserole.

Bake noodles with cottage cheese (recipe in the oven) at a temperature of 180 degrees for 30 minutes, until golden brown. After that, let it cool down a bit. transfer to a dish and cut into portions. It is better to serve noodles while it is still warm, offering sour cream, yogurt or jam to this dish.

Preparation technology and quality requirements.


Never skimp on pasta. This is not meant to be the most expensive, no, just the cheapest will be made from bread flour or soft flour. All this is completely refined flour, in which there is practically nothing useful left. Most often, for color, turmeric is added to such pasta.

Turn the pack over and read the composition - the correct pasta we need will be made from durum wheat flour and water. Everything, there is nothing else in the composition. The exception is colored pasta. It can be added for color, for example, juice of spinach, dill, carrot, tomato and so on - everything is only natural. At the same time, the taste of pasta itself changes a little, which gives them a sort of zest.

You need to cook them in a fairly large amount of water. I noticed that in the technological map, in the description, it is written that 6 liters of water and 50 grams of salt are taken for 1 kilogram of pasta. Therefore, we need about a liter of water and 8 grams of salt. I took about 1.2 liters and 6 grams of salt.

So, pour water into the pan, put on fire, bring to a boil, salt (just before laying the pasta, it turned out about 1 teaspoon, without much of a slide) and put our noodles. Immediately close the lid and bring to a boil again, reduce the fire, mix well so that the pasta does not stick to the bottom and cook for 10 minutes, until tender.

See the packaging for the cooking time. Basically it is 10-12 minutes.


My cottage cheese is 9% fat.

Rub the cottage cheese through a sieve or, the second option, beat until smooth in a blender. I mostly use the second option - blender. You can immediately put everything there - cottage cheese, a pinch of salt, sugar, an egg and beat until completely homogeneous. This time I used a sieve.

Turn on the oven at 200 degrees, let it heat up.

Wash the egg under running water.

So, add salt, sugar and an egg to the mashed cottage cheese. Mix everything well until smooth.


Throw the cooked noodles into a colander.

Add the noodles to the bowl with the curd mixture and mix. Our "dough" is ready to bake.


I took a silicone mold for cupcakes, size 10/24, to the walls of which practically nothing sticks during baking. Therefore, the need for lubrication and sprinkling has disappeared. Therefore, after pouring the "dough" into the mold, I simply smeared sour cream on top, sprinkled a little with breadcrumbs and laid out pieces of butter.


We put the noodles in the oven for ten minutes, until a golden crust forms on top. After baking, we take it out and let it stand for a little, about three minutes, so to speak, to recover. Everything can be cut and applied. It turns out really tender and tasty. But! As soon as it cools down, it immediately becomes denser, and already when reheated, it is not so tender.

Serve with jam, sour cream, fruit sauce. It can be delicious with apple sauce, which I talked about in detail. I served it with sour cream and sprinkled some brown sugar on top.

And personally for myself, I make an "adult" version, invented long ago, the most preferred and beloved. Here, the fatter the cottage cheese, the tastier the dish. We sell cottage cheese 22% fat - most often I take it. Any pasta, I prefer horns, shells and the like, not very large, hollow in the middle.

Two small portions. Boil 100 grams of pasta in salted water. Drain the water.

We clean the onions and carrots (one of each, medium size). Cut the onion into cubes and throw into a frying pan, preheated + a couple of tablespoons of vegetable oil. After a minute, grated carrots go there and fry for a couple more minutes, over low heat. The onion should stay juicy.

Ingredients:

  • (that is, the remains of cooked pasta, preferably medium-sized) - about 2 servings;
  • natural cottage cheese - 150-200 g;
  • cream or sour cream - about 80 ml;
  • chicken eggs - 4 pcs.;
  • greens;
  • sweet paprika;
  • salt;
  • a piece of butter.

Cooking

If the pasta is not small enough, grind them (if they stick together, it is even more convenient to do). Mix the chopped pasta with eggs, cream and cottage cheese. Add chopped herbs and paprika, mix thoroughly. If 1 fresh sweet red pepper is accidentally lying around in the refrigerator, you can add it to the mixture, after cutting it finely. You can also add a couple of tablespoons of wheat flour or cornstarch to the mixture to optimize the consistency. Lubricate the warmed pan generously with butter. Fill with the mixture and bake the noodles in the oven for 25 minutes. Segment into portions and serve, you can pour the noodles with sour cream and garlic sauce and serve a cup of broth to it.

You can cook noodles with meat, in this version it is better to exclude cottage cheese and sour cream.

Noodles with minced meat and egg in the oven - recipe

Ingredients:

  • leftovers - about 2 servings;
  • chicken egg - 3 pcs.;
  • minced meat - about 300 g;
  • onion - 1 pc.;
  • ground black pepper or ready-made mixture of spices;
  • butter or pork lard.

Cooking

Pass the finely chopped onion in a pan in oil until lightly transparent, then add the minced meat and simmer, stirring, until the color of the meat changes (about 5 minutes). If there are a few mushrooms: champignons, porcini or oyster mushrooms, add them too, cutting them relatively finely. Cool the mixture slightly.

Grind cooked pasta and quickly mix with a fork with eggs and onion-meat mixture. Season with spices, if necessary, add a little cornstarch. Fill a greased pan with this mixture and bake in the oven for about 30-40 minutes. Serve with herbs and sauces, such as spicy tomato sauce.

Much more useful will be noodles with chopped boiled meat or seafood, it is also good to add vegetables to the baked mixture.

Noodles with egg, squid, broccoli, zucchini and olives

Ingredients:

Cooking

Cook squid (3 minutes), cool and cut into small strips. Break the broccoli into small pieces and blanch, that is, pour boiling water for 8 minutes, then drain the water. Grate the zucchini on a coarse grater. Cut the olives into slices.

Mix chopped pasta with squid, eggs, grated cheese, broccoli, olives and zucchini. You can add some flour or starch and chopped herbs. Bake noodles in a greased form for 25 minutes. Serve with garlic-lemon-mustard sauce.
