Now we will tell you how to make Rotten Stump salad. Mix the pancake dough from milk, eggs and flour. Add ground paprika, finely chopped greens and chopped onions to it. Pour some butter into the pan, heat it up and bake 6 pancakes. We put them in a pile on the table and leave to cool.

In the meantime, we are preparing the filling for now. We wash vegetables and eggs, fill with water and boil until tender. Then we clean everything from the peel, shell and cool. Grate boiled potatoes on a coarse grater, add chopped dill and mayonnaise. Three carrots and also mix with mayonnaise. Finely chop the eggs and combine separately with mayonnaise.     salt (I put in a quarter teaspoon)

    For the salad:
    boiled potatoes - 3-4 medium-sized tubers
    boiled carrots (I fried raw) - 2-3 pieces
    boiled eggs - 5 pieces
    pickled honey mushrooms - I have a jar of 300 ml
    fresh champignons - 150 g (you can do without them, but I added and did not regret it at all!)
    ham - 200-300 g
    mayonnaise
    greens - dill, parsley
    For registration:
    soft processed cheese - about 400 g (I have 2 jars of 180 g each)
    pickled mushrooms
    greens - dill, parsley, green onions

    Let's start kneading the pancake dough. Mix eggs, salt, paprika and chopped onion.

    Add chopped dill, flour and milk. I must say that I also added baking soda on the tip of a teaspoon. Mix well.

    The dough seemed thick to me and I added a little more milk and a little vegetable oil. She baked pancakes in a dry frying pan. Turned over perfectly! (I was a little worried - I never baked pancakes with onions :-) But in vain! The dough turned out to be very obedient) I got 9 pancakes.

    Potatoes are also consumed + mayonnaise, mix. Diced ham + mayonnaise, mix. Cut the champignons, fry

Salad "Stump" is called so for a reason: after all, outwardly it really resembles a tree stump from a fairy forest, and fabulousness can be added to it with the help of decorations in the form of ready-made pickled honey agarics or homemade mushrooms of fly agarics, dill herb, curly parsley moss or spruce twigs that can be depicted with rosemary.

    Penek salad is prepared on the basis of ordinary pancakes, which are cut and rolled in a certain way. And the filling for it can be absolutely any. You can choose any mixed salad with mayonnaise as the filling, but at the same time it should be slightly viscous so that it is convenient to shape the dish. if the salad is crumbly, the stump may not retain its original shape after you cut it in a common dish. By the way, you can make pancakes sweet and make the same sweet filling - in this case, you will have a good dessert for a children's feast.

    As for the pancakes. If you want to try the sweet version, then take note: custard on the yolks and protein cream. At the stage of assembling the Penek salad, it is described how to prepare exactly the sweet filling.

    First, you need to boil the chicken fillet, adding salt and bay leaf to the water, and also wash and boil the carrots until tender.

    If you decide to use not the breast, but, for example, chicken legs for making the Penek salad, then we recommend that you cook the transparent chicken broth correctly at the same time. on which you can then cook something of the first courses.

    Then you need to prepare the pancake dough: mix the eggs with milk and sunflower oil. Add salt, sugar and mix everything into a homogeneous dough, beat with a whisk or hand blender.

    Gradually add pre-sifted flour and soda quenched in vinegar and stir everything well. In addition to baking soda and vinegar, you can use your usual baking powder for the dough.

    Add some spices to the dough to taste. For example, curry, saffron, or turmeric, which will give the pancakes a brighter color, works well. The consistency of the dough should be like liquid sour cream or kefir.

    Pour a little oil into a large pan (this should only be done before frying the first pancake). When the oil is hot, pour out the dough and fry the pancake on both sides.

    It must be borne in mind that the larger the diameter of the pan, the higher the stump will turn out.

    Put the finished pancakes in a slide on a flat plate. The edges can be brushed with a lump of butter to soften them. You should make at least 5 pancakes.

    Now you can start preparing the filling for the "Stump" salad

    The mushrooms must be peeled, washed and finely chopped.

    Fresh champignons are great for hemp, but if they are not available, then feel free to use pickled mushrooms. The most successful option is those collected with their own hands in the forest - such mushrooms are the most fragrant.

    Peel the onion and cut into small pieces. We will fry these ingredients for hemp, but you can use another cooking option - pickled onions, this is very tasty. For this, it is better to take a red salad onion.

    Pour some oil into a frying pan and fry the onions. Then add mushrooms to the onion and fry them until tender. In the process of cooking, the mushrooms need to be slightly salted, you can add spices.

    Instead of fried mushrooms, you can use, for example, pickled boletus or pickled mushrooms. which also need to be finely crumbled.

    Peel and grate the carrots. Add some mayonnaise and stir. Chopped garlic can be added to taste.

    Finely chop the chicken fillet and also mix with mayonnaise.

    Grate hard cheese on a fine grater, add mayonnaise and mix. You can also add garlic to the cheese to taste.

    We form the "Penek" salad

    When the pancakes and filling are ready, you can start assembling the hemp. To do this, cut the first pancake in half. Cut the second, shifting the cutting line 1 cm from the middle. Cut the third and fourth pancakes, leaving 2 cm from the middle.

    Leave one pancake for making "roots".

    Cover the table or other suitable surface with cling film. On it you need to lay out a strip of pancakes, starting with smaller ones and ending with large ones. Pancakes should be overlapped. Grease the edge of the bottom pancake with melted cheese and glue the next pancake to it.

    Apply the filling in strips: on top (at the cut - this is the top of the hemp) - carrots, then mushrooms, chicken, cheese. Leave a little filling for the "roots" (3-5 tablespoons - as appropriate).

    The filling in "Stump" can be laid not only in layers, as in the photo, but also mixed. In this case, we first lay out the carrots, which here mainly play the role of decorating the stump, making it brighter, then the mixed filling.

    If your filling is sweet, then grease the pancakes with the cream recommended in the preface, put fruits cut into thin slices on top and roll into a roll. You can decorate this version of hemp with mint, tarragon.

    Roll up the pancakes. Hold the filling so that the stump comes out neat. If the carrots come out slightly at the top, trim them with a spatula. When folding the roll, do not squeeze it too hard with your hands.

    Cut the fifth pancake in half. After mixing the remaining filling, fill these halves with it and roll the hemp "roots" out of them.

    Place the "stump" on a flat dish, place the "roots" next to it. It is better to use a large serving dish, then you can richly decorate the stump.

    Decorate the "Pynek" salad with herbs and pickled mushrooms. If you wish, you can boil a few quail eggs and make "fly agarics" out of them.     Prepare the salad filling.
