Pancake pie with chicken is a delicious dish that does not require sophisticated expensive ingredients. Although it is very far from the postulates of proper nutrition, sometimes you can cook such a miracle and treat your family. Or decorate your holiday table with unusual pies with different fillings to surprise your guests.

Of course, it will take about an hour and a half to prepare the delicious dish. But whoever tries it will take this simple recipe for himself forever and ever.

Pancake pie with chicken, cheese, herbs - recipe

Ingredients for the dough:

  • Milk - half a liter,
  • flour - we will look at the consistency of the dough,
  • vegetable oil - 4 tablespoons,
  • egg - 3 pcs.,
  • sugar - a tablespoon,
  • salt.

Filling ingredients:

  • 500 g boiled chicken meat,
  • salt,
  • three garlic cloves,
  • hard cheese – 100 g,
  • a small bunch of dill,
  • ground black pepper,
  • bunch of lettuce,
  • mayonnaise – 3 tablespoons.

Cooking method:

  1. For the dough, beat the egg with a blender, whisk, fork (whoever has what) along with sugar and vegetable oil.
  2. Pour in warm milk, salt, beat again.
  3. Next add flour. It takes enough to make a slightly thick dough.
  4. We bake not very thin pancakes, pouring the dough into the middle of the pan and spreading it in a circle to the edges. Oil has already been added to the dough, so we don’t pour it into the pan.

Preparing the filling:

  • You need to chop the dill finely,
  • boil or stew in advance, remove from bones and chop chicken,
  • grate the cheese
  • crush the garlic with a press.
  • Mix all ingredients with mayonnaise, add salt and pepper.

We assemble the dish in two ways.

  1. We line the pan with pancakes, as in the photo.
  2. Place the rest on top of each other, covering with filling.
  3. Raise the edges of the lower pancakes and cover the stack on top.
  4. Place the pie in the oven or microwave to brown.

You can roll the rolls.

  1. We lay out 4 pancakes on the table, overlapping them, to create a path.
  2. Thickly coat them with the filling and cover with tender green lettuce leaves.
  3. Carefully and tightly roll the roll, giving it a square pie shape.

To prepare the dough you will need:

  • 1.5 glasses of milk;
  • 1.5 cups filtered water
  • 3 chicken eggs;
  • 1.5 cups wheat flour;
  • a pinch of salt;
  • 1 tbsp. l. Sahara;
  • 3 tbsp. l. odorless olive oil.

To make the filling, you need to take the following products:

  • 400 g chicken fillet;
  • 500 g champignons;
  • 1 onion;
  • 3 sprigs of parsley;
  • 200 g hard cheese;
  • 3 tbsp. l. mayonnaise;
  • 1 bay leaf;
  • peppercorns and ground;
  • 1 tsp. seasonings "Provencal herbs";
  • 3 tbsp. l. sunflower oil.

If you don’t have champignons, you can replace them in the recipe with other mushrooms suitable for frying. Boletus, boletus, saffron milk caps and chanterelles will do.

  1. To prepare pancakes, use only ingredients removed from the refrigerator in advance. They should warm up to room temperature. This way the pancakes will be as thin as possible.
  2. If the frying pan is not non-stick, heat it with plain salt before you start cooking. After this, pour the salt, wipe the pan with a paper towel and pour the dough onto it. This way the pancakes won't burn.
  3. To make the pancakes holey and porous, add sparkling mineral water to the dough instead of regular water. Stir the mixture carefully so as not to release all the gases. So the products will come out openwork
  4. If the dough turns out to be very liquid, there is no need to immediately add additional flour. First, divide the mass in half, add flour to the first part, stir everything well, break up the lumps, and then combine with the remaining dough.

  • vegetable oil - 1 - 2 tablespoons. Replace with butter if desired. Melt it in a water bath to a liquid consistency;
  • sugar - 1 tablespoon;
  • salt - a pinch.

From the dishes, take a pancake frying pan (a simple one with a thick bottom or non-stick coating will do), a deep container (bowl), a ladle, a whisk or a mixer. Prepare food in advance. Leave them for 2 - 3 hours until they come to room temperature (the dough will be more homogeneous).

Cooking process:

  1. Break the eggs into a container. Add sugar and salt there. Whisk.
  2. While stirring the eggs, pour in the milk.
  3. Sift the flour. Gradually introduce it into the liquid mass.
  4. Add butter to the dough. Mix thoroughly. Check if the mass is homogeneous. If there are any lumps, stir again until they disappear. The consistency of the dough resembles liquid yogurt or sour cream.

Leave the finished dough on the table for 7 - 15 minutes. Then stir and start frying:

  1. Place the frying pan over high heat. Once the pan is hot, reduce the heat to medium-low. Grease the bottom with butter or a piece of lard.
  2. Scoop the dough into a ladle and pour the mixture into the center of the pan. Using a circular motion with your hand, spread the dough over the entire bottom. Fry for a minute.
  3. Use a knife or spatula to lift the pancake and turn it over to the uncooked side. Leave the pancake for 20 - 30 seconds.

Prepare all the dough in this way (the more pancakes, the higher the pie will be). Then work on the chicken filling.

Filling

You will need:

  • chicken meat - half a kilogram. Give preference to fillet;
  • egg - 3 pieces;
  • hard cheese - 150 - 200 grams;
  • green onions - 100 grams;
  • garlic - 2 - 3 cloves;
  • dill and parsley - to taste;
  • mayonnaise or salted sour cream - to taste;
  • onions (optional) - 1 - 2 pieces.

If you like tomatoes, you can add 2 - 3 fruits to the filling. Salt to taste.

Cooking process:

  1. Prepare chicken meat - fry with onions, stew or boil. Another option is to boil it, then fry it with onions. Don't forget to salt it. Cut the finished meat into small pieces or break it with your hands.
  2. Boil the eggs. Cool and peel. Cut into small pieces.
  3. Grate the cheese. It is preferable to use a fine grater.
  4. Chop the herbs and garlic.
  5. If you decide to add tomatoes to the dish, cut the fruits into slices or cubes.

When all the ingredients are ready, assemble the pie. Here you can choose one of two options (or come up with your own):

  • put all the products in a deep bowl, add sour cream or mayonnaise and mix. Place the pancake as the first layer, the filling as the second;
  • mix all ingredients except tomatoes and dressing. Place the pancake in a bowl, place the filling on top, put the tomatoes on it, and again – the pancake.

Lay out all the layers in this way. Grease the top pancake with dressing (mayonnaise or sour cream) and sprinkle with grated cheese. Leave the assembled pie for 2 - 3 hours so that the pancakes are soaked, or place in a preheated oven for 3 - 7 minutes (the cheese will melt and the pie will acquire an appetizing golden brown crust).

Another interesting option for a second course, but not with pancakes -. This dish will feed the whole family, rest assured.

With chicken and mushrooms

Pancake pie with chicken and mushrooms is prepared in a similar way. The pancake recipe is the same, the filling is different.

You will need:

  • chicken meat - 400 - 500 grams. Sirloin is best;
  • mushrooms (champignons, oyster mushrooms or others) - half a kilogram;
  • hard cheese - 200 - 250 grams;
  • egg - 3 pieces;
  • mayonnaise or sour cream - to taste;
  • onions - 1 - 2 pieces;
  • green onions or other greens - 100 grams;
  • garlic - 3 - 4 cloves.

If desired, add tomatoes to the dish - 1 - 2 pieces. Salt or add spices to the dish to taste.

Cooking process:

  1. Process the chicken as described in the first recipe. Cut into cubes.
  2. Wash the mushrooms. Cut into small pieces. Chop the onion. Pour vegetable oil into a frying pan and fry the mushrooms for 10 - 15 minutes under the lid. Then add the onion. Simmer until done.
  3. Boil the eggs. Finely chop.
  4. Grate the cheese.
  5. Chop green onions and garlic.
  6. If using tomatoes, cut the fruit into cubes.
  7. Place meat, eggs, herbs and garlic in a bowl. Add dressing (sour cream or mayonnaise) and stir.

Now we form the pancake pie. Take a large dish and place a pancake on the bottom. Place chicken filling on top and tomatoes on top. Sprinkle with cheese. Cover the layer with a pancake. Thin filled pancakes are delicious on their own, but today I propose to complicate the culinary task and assemble a pancake pie with chicken and mushrooms. In a similar way, products are formed with other fillings: cottage cheese, cabbage, meat... I advise you to additionally cover the pie with breadcrumbs and butter, then a delicious crispy crust will form.

To prepare pancake pie with chicken and mushrooms, take the ingredients from the list. You will need pancake dough, boiled chicken, mushrooms, onions, vegetable oil, spices, eggs, milk, butter, ground crackers.

Let's bake thin pancakes, and the dough recipe can be your favorite, proven one. My arsenal is as follows: for 600 ml of milk I take 200 g of flour, 2 eggs, 4 tbsp. sugar, a pinch of salt, 4 tbsp. vegetable oil. I mix it the night before, leave it in the refrigerator for 8-12 hours, and bake it the next day.

For the filling, we chop the meat of pre-boiled chicken (better - the parts on the bone, they are more juicy than fillet), onions and champignons (often additionally fried, for me - raw). Stir, season with pepper and salt.

Place dense bars of filling on each pancake and roll it up.

We first line a fireproof container with empty pancakes (6 pieces were used here), then we place pancakes with chicken and mushrooms (about 9 pieces) in two tiers.

Close with overhanging edges, fill with eggs beaten with milk, sprinkle with ground white bread crumbs, and lay out pieces of butter. Place in a preheated oven for 25-30 minutes and bake at 180 degrees.

  • medium-sized onion – 1 pc.

  • cream 20% fat – 150 ml
  • semi-hard cheese – 200 g
  • thin yeast-free pancakes with a diameter of 22–24 cm – 20 pcs.
  • salt, ground black pepper - to taste

STEP-BY-STEP COOKING RECIPE

Prepare the filling for the pancake pie. Wash the chicken fillet, dry it and cut into small cubes. Peel the mushrooms and cut into plates or slices.

Peel and finely chop the onions for the pancake pie filling. Wash the parsley sprigs, dry with a paper towel and tear off the leaves. Finely chop.

Heat vegetable oil in a frying pan. Place the chicken and fry on all sides. Post it. In the same pan, brown the onions and mushrooms. You can add a little butter or vegetable oil.

Return the chicken to the pan and cook over low heat for 5 minutes. Pour in the cream, salt and pepper to taste. Remove the pancake pie filling from the heat and let it cool slightly.

Add parsley to the filling for pancake pie with chicken and mushrooms. Grind in a blender until a homogeneous consistency is obtained. Taste and, if necessary, add a little more pepper.

Grate the semi-hard cheese on a medium grater. Prepare a tall pan with the same diameter as the pancakes. Lay them out, coat them with filling and sprinkle with cheese. The top of the pancake pie should be covered with filling and sprinkled with cheese.
