“Mushroom Glade” is a hearty and elegant mushroom salad for the holiday table. It can be prepared for any feast, be it New Year, Christmas or March 8th. The “Mushroom Glade” salad owes its name to its original appearance, reminiscent of a forest edge where mushrooms grow.

There is no strict list of ingredients and order of layers for preparing the dish. Layered salad turns out equally tasty with champignons or honey mushrooms, with boiled sausage, ham or chicken. If desired, you can add pickled cucumber to it, and use sour cream instead of mayonnaise.

How to prepare Mushroom Glade salad

  1. Place whole marinated champignons on the bottom of the salad bowl, caps down.

  2. Sprinkle the mushrooms with finely chopped herbs on top, which will give the salad a beautiful color and a spring-like fresh aroma.

  3. Potatoes, previously boiled “in their jackets” and peeled, are chopped on a coarse grater and laid out in an even layer on top of the greens. Generously grease with mayonnaise, distributing it evenly with a tablespoon.

  4. The next layer is hard-boiled eggs, chopped on a coarse grater. Add a pinch of salt and coat with sauce.

  5. We spread the boiled and grated carrots, grease the top with a small amount of mayonnaise.

  6. Cut the ham or boiled sausage into small cubes (if desired, you can also grate it by placing it in the freezer for 15 minutes), coat it with mayonnaise. If chicken is used, the meat should be boiled in salted water until tender, then disassembled into small fibers.

  7. The last layer is shredded cheese. We do not lubricate with mayonnaise!

  8. Let the salad sit in the refrigerator for at least 1 hour, then turn the salad bowl upside down, covering it with a flat plate.

  9. Remove the top dish, thus freeing the dish from the salad bowl.
  10. We decorate the “Mushroom Glade” salad with champignons along the contour with a thin line of mayonnaise to give it a more elegant look, and immediately serve the dish to the table!

On a note

To prepare the salad, it is better to use a glass salad bowl. If you don’t have such dishes, line the bowl with cling film - this will help you easily remove the finished salad while maintaining its shape.

Step-by-step preparation:

  1. To prepare mushrooms, peel the stems and wash well.
  2. Combine all the ingredients for the marinade and boil this mixture. Place the champignons in the hot brine, stir and cook over low heat, covered, until boiling. Then skim off the foam and continue cooking for another 15 minutes. Cool the mushrooms and transfer them to ice water, then return them to the marinade and boil again. Turn off the heat and leave to cool until completely cooled.
  3. Wash the chicken fillet, dry it with a paper towel and make punctures with a sharp knife so that the meat is better marinated.
  4. In a bowl, combine soy sauce, vegetable oil and pepper. Place the fillet in it, cover with a lid and leave for an hour. After this time, remove the fillet and fry for 3 minutes on each side. Place it on foil and add butter. Wrap tightly and place in an oven preheated to 180 degrees for 10 minutes. Cut the finished fillet into small pieces.
  5. Wash the potatoes and carrots and boil them in different saucepans with salt added. Add bay leaf, oil, dill and vinegar to the potatoes, and soda and sugar to the carrots. The potatoes will be ready in 20 minutes, the carrots in 15. Remove the finished vegetables from the saucepan and cool. Then peel and grate on a coarse grater.
  6. Peel the onion, wash and cut into half rings. Soak it in a vinegar solution with water for 5-7 minutes.
  7. For dressing, boil hard-boiled eggs. Then peel and remove the yolks. Grind them with mustard, salt, sour cream, sugar, basil and lemon juice.
  8. Start assembling the salad. To do this, cover a cake pan or any convenient dish with cling film and place the marinated mushrooms so that the caps are facing down.
  9. Sprinkle the mushrooms with chopped dill and parsley.
  10. Make the dressing with a mesh and sprinkle with grated carrots.
  11. Apply a layer of dressing again and add grated cheese.
  12. Next, place the chicken fillet and onions marinated in vinegar.
  13. The next layer is dressing, boiled eggs, grated on a fine grater.
  14. Re-dressing and potato layer.
  15. The salad is completed with dressing.
  16. Cover the salad with parchment paper, grease it with vegetable oil in advance and place a large flat plate with a 0.5 liter jar filled with water on it.
  17. Place the salad in the refrigerator for half an hour. Afterwards, remove the jar with parchment and lay out the lettuce leaves. Place a large serving platter and turn the salad upside down. Carefully remove the mold, holding the cling film, remove the mold and bag.

  • Pour boiling water over the chicken breasts, just enough to cover the meat, add salt, add a bay leaf, and cook until tender. Cut the cooled chicken meat into cubes.
  • Finely chop the onions and cucumbers. It is better to take blue onions, they are also called Crimean, they are sweet and go well in salads. If you only have regular onions, then to get rid of bitterness, pour chopped onions with boiling water for 10 minutes.
