Ingredients

Dough:

  • milk - 100 ml
  • chicken egg - 2 pcs.
  • salt - 1 tsp
  • sugar - 1 tbsp. l.
  • fresh yeast - 25 g
  • butter - 70 g
  • vegetable oil - 2 tbsp. l.
  • wheat flour - 400 g
  • smoked sausage - 300 g

Preparation

1. The principle of kneading yeast dough is quite simple. Buns turn out to be more fluffy if you make a dough. To do this, crush the yeast into a convenient deep bowl, add sugar, mash the yeast with sugar.

2. Heat milk to 35-38 degrees. It shouldn't be hot. Pour over yeast. Stir to dissolve the sugar.

3. Add about 100 g of sifted flour. Stir. You should get a mass similar in consistency to liquid sour cream. Cover the bowl with a towel and leave in a warm place to rise. Depending on the room temperature, this may take 20 to 30 minutes. You can warm up the oven a little and turn it off, send the dough into a warm oven.

4. While the yeast is running, beat the eggs into a separate bowl. Add salt and mix well until smooth.

5. Melt the butter in the microwave. Let it cool slightly and add to the egg mixture. Stir.

6. As soon as the dough grows well, add the egg-oil mass. Stir.

7. In small portions add flour, previously sifted through a fine sieve, to the liquid part, and stir with a spoon until evenly distributed. Add flour to make a soft dough. Do this on a dusty board.

8. Cover the finished glomerulus with a towel and again hide in a warm place for 40-60 minutes.

9. Pour the rested dough. For convenience, it can be divided into two parts and work with each separately. Roll into a non-thin layer. Cut into strips about 8 cm wide.

Prepare smoked or cooked sausage. Cut it into thin semicircles. Lay the sausage semicircles with the "crescent" outward on one strip on both sides.

Delicious homemade can be a great alternative to pizza or hot dogs, however, they will not contain vegetables. These can be prepared not only from yeast, but also from puff pastry. As for the filling, for their preparation you can use hard cheese, processed cheese, suluguni cheese, mozzarella, feta. With each of these types of cheeses, buns will turn out with one or another taste.

As for the sausage, it is boiled sausage or milk sausages or small sausages that are most often used; smoked sausage is less often used. The recipes for the sausage and cheese buns are very varied. It is no secret that puff pastry is prepared using a large amount of vegetable or butter.

In order to make the buns with a more juicy filling, in addition to cheese and sausages, one or another sauce is used - mayonnaise, tomato sauce, barbecue sauce, mustard. Mixing of one or more sauces is allowed. So, you can experiment as you like.

Today I want to show you how to make delicious sausage and cheese buns according to a simple recipe. We will have homemade delicious yeast buns in the form of small rolls with a golden crust. I also call these buns lazy. To cook them, you do not need to sculpt each of them separately.

All you need is to prepare a roll with a filling and cut it into even lengths, which will later become buns. By the way, according to this principle, you can cook some delicious buns with a sweet filling.

In this recipe I will use boiled sausage and hard cheese, but you can choose cheese and sausage according to your taste and discretion.

Now let's move on to the recipe and see how to cook buns with sausage and cheese made from yeast dough step by step... This time I cooked the dough in milk. It is quite possible to use ordinary water for the recipe, but with milk it turns out to be more tasty. If you use water instead of milk, I advise you to add an extra spoonful of vegetable oil to the dough.

Ingredients for the dough:

  • Milk - 1 glass
  • Wet yeast - 20 gr.,
  • Sugar - 1 tsp,
  • Salt - on the tip of a teaspoon,
  • Sunflower oil (refined) - 3 tbsp. spoons,
  • Wheat flour of the highest grade - 2.5 cups

Ingredients for filling buns:

  • Boiled sausage - 200 gr.,
  • Hard cheese - 200 gr.,
  • Ketchup - 70-100 gr.

To grease buns:

  • Eggs - 1 pc.

Buns with sausage and cheese - recipe

We start cooking yeast buns in the oven with the preparation of the dough. Prepare a deep bowl for kneading the dough. Pour warm milk into it.

Crumble wet yeast into it. Stir with a spoon.

Add sugar.

Add salt.

Pour refined sunflower oil into the dough.

Whisk the yeast dough ingredients vigorously.

Add flour to the liquid in small portions.

As soon as the dough becomes thick and sticks to your hands, place it on the table, sprinkled with flour. Knead the dough with your hands until smooth. Transfer the finished dough to the bowl again. Let it sit for about 1 hour and cover the bowl with a towel to prevent crusting. When the dough comes up, wrap your hands around it. Leave it to come up again.

In the meantime, prepare the filling for. On a coarse grater, grate hard cheese and boiled sausage.

Roll out the yeast dough into a thin rectangle.

Brush it with ketchup or tomato sauce. You can mix ketchup and mayonnaise in equal proportions and grease the dough with the resulting sauce.

Then sprinkle it with grated boiled sausage.

Sprinkle grated cheese on top of the sausage.

Roll the dough with the filling into a roll.

Lightly press down the finished sausage and cheese roll with your hands to make it flatter and wider.

Use a sharp knife to cut it into pieces 4-5 cm long. This is the optimal length for the buns.

Put the finished buns with sausage and cheese on a baking sheet, which has been greased with vegetable oil so that they do not stick during baking. Leave them on for 10 minutes so that they fit slightly and get a little taller.

While they are coming up, turn on the oven at 180C. Brush with a beaten egg for a golden brown finish.

Place the baking sheet on the middle rack of the oven. Bake them for about 30 minutes.

Ingredients:

  • homemade puff pastry (1 kg);
  • three sausages;
  • hard cheese (150 g);
  • a pack of mayonnaise;
  • one yolk for brushing;
  • sesame seeds (if you don’t like it, you don’t have to take it).

Preparation:

  1. Roll out the dough about 4 mm thick. We cut it into even squares.
  2. In the middle of each piece, spread mayonnaise (spreading over the entire surface), chopped sausages and cheese.
  3. We wrap everything in an envelope.
  4. We turn on the oven to 220 degrees. Cover the baking sheet with parchment paper, grease with vegetable oil and lay out the envelopes. We send everything to the oven for 30-40 minutes.
  5. In the middle of baking with yolk.

Serve hot.

Liver patties

From the amount of ingredients described below, you get about a bowl of pies (6 large oven sheets). If you do not need that amount, reduce the ingredients by 2 or 3 times.

For the liver:

  • 1 kg of beef liver;
  • 1 kg of beef lung;
  • 1 kg of beef heart;
  • a pack of butter;
  • a few medium-sized bulbs;
  • peppercorns;
  • Bay leaf;
  • vegetable oil;
  • a tablespoon of celery;
  • salt.

Preparation:

  1. First, you need to rinse the offal well. Next, we cleanse the liver from the film and bile ducts, cut into medium pieces and soak in milk.
  2. Put the lungs and heart, cut into large pieces, into a large saucepan. Add onion cut in half, pepper, celery. We set to cook on moderate heat for about 2 hours. At the end we put another bay leaf. Once the heart is easily pierced with a fork or knife, you're done. As a rule, the lung is cooked faster, then the heart is ready.
  3. We are engaged in the liver. We drain the milk where the liver was soaked. Fry finely chopped onion in a hot frying pan, lay the liver cut into small pieces on top of it. Salt and pepper everything well, put it on low heat and simmer until the liver begins to secrete blood. Try not to overcook it, otherwise it will be tough. After that, take out, and discard the used onion.
  4. Fry two more onions in vegetable oil.
  5. All cooked products (lung, heart, liver and onion) are passed through a meat grinder with a large nozzle. Add a little cooled broth to the resulting minced meat. We mix everything well and try, if everything suits you and you don't need to add salt - the liver is ready.

For the test:

  • liter of milk;
  • 5 eggs;
  • a glass of sugar;
  • vegetable oil (about 7 tbsp. l.);
  • salt (2 tsp without top);
  • dry yeast packaging;
  • one and a half kilograms of flour.

Preparation:

  1. We knead the yeast dough so that it lags behind the walls of the dishes. We put it in a warm place for lifting. We close all windows and vents so that there is no draft. The dough will rise for about 40 minutes, no less. At the end of this time, we interrupt him and set him up again.
  2. Then we start, put the ready-made filling in the middle. We give them a little distance and proceed to baking or frying. We bake at 180 degrees.

Delicious buns with sausage filling

Sausage burgers are a great substitute for sandwiches. They can safely equip a child to school instead of ordinary sausage sandwiches or take them to nature instead of kebabs. They look interesting, which attract the attention of both children and adults, they are quite tasty.

For cooking you will need:

  • wheat flour - 475-510 g;
  • yeast - 16-23 g;
  • butter - 135-155 g;
  • eggs - 2-3 pcs.;
  • fresh milk - 180-220 g;
  • sugar - 18-25 g;
  • salt - 9-14 g;
  • boiled sausage - 450-500 g.

Cooking procedure:

  1. To prepare the dough, warm milk to room temperature, add sugar, table salt, yeast and mix everything thoroughly.
  2. Put the future dough in a warm place for 17-26 minutes.
  3. Pour the dough into a large saucepan, add one egg and stir.
  4. Add 65-70% flour and table salt.
  5. Knead the dough, gradually adding the rest of the flour.
  6. After the flour has been absorbed by the dough, add the cooled butter melted in a pan and knead everything again.
  7. Form a bun out of the dough, put it in a container, cover with a linen cloth and send it to grow in a warm place for 110-120 minutes (during this time, the dough should be crushed several times).
  8. For the filling, cut the sausage into rings 4-7 mm wide.
  9. Roll out the grown dough thinly enough and squeeze circles out of the resulting pancake the same diameter as the sausage.
  10. Form "sandwiches": fold in turn three circles of dough and two circles of sausage (there is no need to grease the dough in "sandwiches").
  11. Gently pinch the edges of the resulting "puff sandwich" to hide the filling.
  12. Make 4-5 cuts alternately from the near and far sides (they should not be brought to the end of the cake).
  13. Turn the resulting half-strips of the roll with the filling outward and fasten the edges of the roll together.
  14. Put the prepared rolls on a baking sheet sprinkled with flour.
  15. Allow the rolls to come up for about 27-30 minutes and only then grease them with an egg and place in an oven preheated to 175-195 degrees for 47-50 minutes.

Give the finished buns some time to cool down and you can call your relatives to the table.

It is not worth saving on sausage for this dish: both the aesthetic appearance and the taste of future rolls depend on it.

Soufflé with cheese and sausage (bacon)

Ingredients:

  • 4 eggs;
  • sour cream package 15%;
  • butter (20 g);
  • soft cheese (100 g);
  • sausage or bacon (100 g);

If you want to make it faster and easier, you can purchase ready-made yeast dough. If not, mix it yourself.

Preparation:

  1. We take a small piece of dough, roll it into a ball, then use a rolling pin to roll it out on the table and cut into squares. The width of the strip must be at least 2 cm.
  2. Cut the sausage into rings, in half. We put it a little higher from the edge of the dough.
  3. Roll the dough inward with a rosette-shaped sausage.
  4. Put it on a greased baking sheet and send it to the oven at 180 degrees for 20 minutes. We bake until the roses appear golden brown.

Stuff with filling, sprinkle with grated cheese tops. Grease a baking sheet with butter, put the stuffed buns on it and bake in a preheated oven until the cheese is melted.


5▬Buns with ham and tomatoes

  • 8 buns,
  • 300 g boiled ham
  • 3 tomatoes,
  • 150 g of hard cheese
  • 100 g butter

  • ground black pepper and salt to taste.


Cut onions into small cubes and lightly fry in hot oil. Add ham, cut into small cubes, to the onion and fry until golden brown. Scald the tomatoes with boiling water, then pour over with cold water and remove the skin. Cut the tomatoes into cubes and place in a skillet with onions and ham. Salt and pepper everything, mix and simmer until the liquid evaporates. Stuff the lower parts of the buns with the tomato and ham mixture. Grease the bun lids with butter and roll in grated cheese. Cover the stuffed buns with lids, place them on a baking sheet and bake in the oven at 180 ° C for about 15 minutes. When serving, sprinkle the finished buns with finely chopped parsley.

6▬Buns with sausage

  • 2 sesame buns
  • a couple of slices of smoked sausage
  • slices of cheese
  • pickled cucumbers,
  • boiled sausage or sausages,
  • butter, ketchup and mayonnaise.

You can change the composition of the products at your discretion. Cut off the top of the buns and remove the crumb. Lubricate the inner walls with oil and put a piece of smoked and boiled sausage there, brush with mayonnaise. Put cucumbers and a slice of cheese on top, pour with ketchup. Repeat layers and add mayonnaise on top of the cheese. Cover the burgers with cut "lids" and bake in a preheated oven for 8-10 minutes over medium heat.

  • 4 French rolls,

  • 1 clove of garlic
  • dill and parsley,
  • 2 tbsp. tablespoons of refined vegetable oil, red and black ground pepper, salt.

Cut the meat into pieces and mince it. Wash, peel and chop the onion and garlic. Wash and peel the bell pepper. Cut it into small pieces. Chop parsley and dill. Grate the cheese on a fine grater. Cook the minced meat in the microwave for 5 minutes at 80 percent power. Then season with pepper and salt, add herbs and stir. Cut off the top of the buns and gently remove the crumb. Fill the buns with cooked minced meat and sprinkle with grated cheese on top. Microwave at 100% power for 2 minutes.

If desired, cooked buns can be laid out on lettuce leaves and garnished with parsley.

8▬Hot buns with sausage and cheese

  • Hard cheese - 150 gr.
  • Hot dog buns - 6 pcs.
  • Sausage - 150 gr.
  • Mayonnaise - 2 tablespoons

Take hard cheese and cut it into neat small cubes. Do the same with the sausage. Gently remove the crumb from the purchased buns. Toss the crumb with the sausage and cheese in a bowl. Pour mayonnaise into the crumb mixed with sausage and cheese. Mix everything thoroughly and gently again.

Stuff the prepared buns with the resulting crumb-sausage-cheese mixture. 5. Place the minced meat buns in the pre-switched oven and bake for about 10 minutes. Until a beautiful and pleasant baked crust is obtained.
